i came up with this recipe after having something similar that my husband's aunt made (that was served warm instead of cold).
Spinach and Orzo Salad
16oz of orzo pasta
1-16oz bag of baby spinach, finely chopped
1 small red onion, finely chopped
6 Roma tomatoes, seeded and chopped
16oz of fresh mozzarella, chopped into bite-size pieces
¼ cup of pine nuts
¼ cup of capers
¼ cup of light olive oil
¼ cup of balsamic vinegar
¼ cup of grated parmesan cheese
Cook orzo pasta as directed. Rinse in cold water. Chop red onion, Roma tomatoes, and mozzarella cheese. Combine with pine nuts and capers, and then toss with cooked orzo pasta. Toss the salad with oil and balsamic vinegar, then refrigerate for 1 hour. Sprinkle grated parmesan on top before serving.
Serves 8-10.
**I typically use a little less pasta and a little more tomatoes, capers, and pine nuts - but only because I like my salad to be not as heavy on the pasta.**
