Class is okay. Past the halfway point, so that's good. I'm ready for December/January break. Since I only get about two weeks between each semester since Spring, a 6 week break sounds very appetizing right now. laugh out loud

Preparing the roux using the bacon drippings makes this an incredibly rich dish. We used half-and-half and milk instead of heavy cream and half-and-half. It was unbelievably delicious.

Oh and I always have at least two blocks of cabot white cheddar in the fridge. I wrote them once to ask about the difference in their cheeses and the colors and got a very nice letter in return with coupons.

Whether or not I brine depends on my laziness level this year laugh out loud
Even the self-basting birds come out delicious though, and I don't have to start them until around 11AM woot
