It's large cubed smoked back-fat or belly. I used some smoked bacon and cut it in big chunks because the local grocery didn't have smoked cubes of pork or a smoked piece that I could cut up.

I might have had it on too high, also cooked it too long, DH was late getting home.

Dinner was orzo pasta topped with a Swiss cheese, lemon, and white wine sauce. Mrs. Frog had steamed broccoli florets with hers. I had chopped andouille sausage in mine. For the chefs reading along, here's how to prepare the sauce:

2 tablespoons butter
2 tablespoons flour
1/4 cup to 1/3 cup white wine (I used Pinot Noir)
1/4 cup to 1/3 cup half-and-half (or milk)
five slices of baby Swiss cheese, chopped
zest of one lemon
juice of one-half lemon
1/4 teaspoon white pepper

Sautee but do not brown the flour in melted butter to prepare a blonde roux. Cook the roux for two to three minutes after it begins bubbling. Whisk/stir continuously. Add milk/half-and-half and whisk until smooth, then add the chopped cheese and whisk again. Finally, add the lemon zest, lemon juice, and white wine, whisking until smooth, and remove from the heat.

This sauce is excellent over or beneath broiled fish filets or crab cakes. The variance in amounts of liquids is to suit your personal preference in having a thicker or thinner sauce.

Super easy black bean soup

1 can black beans
1/4-to-1/2 can refried black beans (for thickening)
1 can chicken broth
1 whole white or yellow onion, chopped or julienned
2 cloves of garlic, peeled, crushed, and chopped
1 link (about five inches) smoked sausage, sliced or chopped

Sautee the onions in a pan, throw in everything else after the onions go translucent. Simmer as long as you like on low heat.

I found this Keto Friendly Cheesecake recipe a few years ago. Still make it even though I am not really strict with my carbs. Everyone loves when I make\serve it during holidays.

Almond Flour Cheesecake Crust
2 cups Blanched almond flour
1/3 cup Butter (measured solid, then melted)
3 tbsp Erythritol (granular or powdered works fine)
1 tsp Vanilla extract

Keto Cheesecake Filling
32 oz Cream cheese (softened)
1 1/4 cup Powdered erythritol (erythritol must be powdered; can also use powdered monk fruit sweetener) (or 1 cup swerve)
3 large Egg
1 tbsp Lemon juice
1 tsp Vanilla extract

Instructions
  1. Preheat the oven to 350 degrees F (177 degrees C). Grease a 9 in (23 cm) springform pan (or you can line the bottom with parchment paper).
  2. To make the almond flour cheesecake crust, stir the almond flour, melted butter, erythritol, and vanilla extract in a medium bowl, until well combined. The dough will be slightly crumbly. Press the dough into the bottom of the prepared pan. Bake for about 10-12 minutes, until barely golden. Let cool at least 10 minutes.
  3. Meanwhile, beat the cream cheese and powdered sweetener together at low to medium speed until fluffy. Beat in the eggs, one at a time. Finally, beat in the lemon juice and vanilla extract. (Keep the mixer at low to medium the whole time; too high speed will introduce too many air bubbles)
  4. Pour the filling into the pan over the crust. Smooth the top with a spatula (use a pastry spatula for a smoother top if you have one).
  5. Bake for about 45-55 minutes, until the center is almost set, but still jiggly.
  6. Remove the cheesecake from the oven. If the edges are stuck to the pan, run a knife around the edge (don't remove the springform edge yet). Cool in the pan on the counter to room temperature, then refrigerate for at least 4 hours (preferably overnight), until completely set. Do not try to remove the cake from the pan before chilling.

I just got this recipe from my MIL, have not made it yet so cannot vouch for the outcome

Cherry Pudding
2 eggs
1 cup milk
1/2 tsp salt
1 tbsp melted butter
1 1/2 cup flour
1/2 cup sugar
1 tsp baking powder
2 cans cherries

Mix ingredients together (except for cherries), turn into a greased pan (size?).
Pour 2 cans cherries over top and press into batter, sprinkle with 3 tbsp sugar
Bake at 350 for 35-40 minutes


Sauce

1 1/2 cup sugar
1 cup milk
1 tsp butter
1 tsp vanilla

Cook over medium heat until slightly thick

From "Good Housekeeping's Book of Good Meals"
Fourth Edition, Copyright 1927
  • Two medium-sized sour apples (Granny Smiths)
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 3 tablespoon powdered sugar
  • 1/4 teaspoon salt
  • 1/3 cup whole milk
  • 1 egg

Mix and sift dry ingredients. Combine milk and egg well beaten and add to dry ingredients, while beating constantly. Peel and cut the apples into small pieces. Sprinkle with sugar and heavily with cinnamon before folding into the batter. Drop by spoonfuls and fry in oil. Flip them over after a few minutes, when the underside begins to brown. Complete cooking, drain over paper, and dust with powdered sugar or cover with a simple glaze of 1 cup powdered sugar, 1 teaspoon vanilla, and 1/4 cup of milk.

For those that remember (and liked) the original KFC cole slaw recipe from 15-20 years ago, here it is. I make it with BBQ ribs, pulled pork, or whenever we have a large gathering of people.

THE ORIGINAL KFC COLE SLAW

1/2 c mayo
1/3 c white sugar
1/4 milk (I use 2% or whole but I wouldn't use anything less)
1/4 c buttermilk (fat-free does not work as well)
1 1/2 tbsp lemon juice
1 tbsp white vinegar
1/8 tsp black pepper (coarse, not fine)
8 c finely chopped cabbage (chopped small like grains of rice) *Do not chop the cabbage until your dressing is ready. It will start to turn brown.*
1/4 c finely chopped carrot

Dressing: Combine milk and buttermilk. Add sugar and mix until dissolved. Mix in mayo, lemon juice, and vinegar.

Pour dressing over the cabbage and carrot mix. Add pepper. Stir until combined well. Refrigerate at least one hour and mix before serving.

(If you like it sweeter, add another tsp. or two of sugar to the dressing.)

CHEESE GRITS CASSEROLE

This goes great with seafood, ribs, and even fried chicken.

Preheat oven to 350 degrees.

1 c quick (5 minute) grits
4 c water
1 stick of salted butter, cut into chunks
2 eggs (well beaten)
1/4 c milk (I use 2%. I wouldn't use anything less though.)
1 1/2 tbsp finely chopped jalapeños ( I use jarred but you can use fresh)
7-8 ounces of shredded cheddar (sharp or medium) OR Mexican cheese
salt & pepper to taste

Using the 4 cups of water, cook the grits according to the package directions. Add the butter, cheese, eggs, peppers, milk, salt, and pepper. Stir until blended. Pour into 1 1/2 greased baking dish and bake for 50 minutes. (Cover for the first 20 minutes only.) Let rest for 10 minutes before serving.

BRO MIKES FAMOUS CHILI

Makes about 3 4 servings, depending on how much you spill

* 1 12 oz beer (optional can add to chili, or just drink while cooking)

1. Drain liquid from kidney beans and add to large cooking pot (dont turn on heat yet).
2. Add in tomatoes (do not drain) use fork to break open whole tomatoes - - cooking apron & goggles recommended .
3. In a separate fry pan or skillet, fry minced garlic in cooking oil on medhigh heat until slightly brown.
4. Add in and fry most of the chopped green pepper (toss some of the raw peppers directly in the chili pot)
5. Add in and fry most of the chopped onion (yes, toss a bit of the un-fried chopped onions in the chili pot too gives it a little crunch).
6. Saut onions on medium heat until caramelized (can cover pan if youre starting to cry), then add the fried mixture to the chili pot.
7. Brown ground beef in same skillet / fry pan.
8. Drain off grease, and then stir in chili seasoning. (Add a splash of oil if needed to mix in seasoning)
9. Add the browned meat to your chili fixings in the pot.
10. Stir mixture together in pot, add bay leaf, salt, beer or water, and any other seasoning youre trying to get rid of, and set heat to high (thats right).
11. Bring your creation to a near boil, stirring frequently, and then turn down heat to a low simmer.
12. Cover pot and stir occasionally simmer at least one hour, longer if the game is on.
13. Before serving, fish out the bay leaf (so no one chokes).
14. Serve with favorite cold beverage - bon appetite baby.
Need to make this this evening... nice fall weather food.
