I hadn't either - we looked it up online and discovered pancetta is pretty close. Makes a yummy yummy risotto!
Definitely! Whee

There's a more complicated recipe for risotto that includes making your own chicken broth with stewing a whole chicken in combination with the bone marrow. Another variant is using red wine to make it purple risotto.

Just amazing.

I really want to master ratatouille but getting the texture right is tricky. For a recipe that is supposed to be "for peasants" its hard to get it right, laugh out loud

Question...
If you add either peppermint or raspberry extract to toll house cookies with the flavor come through?

I'm trying the raspberry extract now. I did find out that it's not a good idea to try adding one frozen raspberry to each cookie before baking laugh out loud It watered it down and made it mushy due to the frost. Yucky

I hope you don't mind my jumping in here. Smilie Thought I'd contribute my recipe for one of DH's favorite meals that I make.

Ingredients
Package of peppered bacon, cut in half vertically
2 chicken breasts
4 kaiser rolls (or some sort of sandwich rolls of your choice)
4 slices American Cheese

Wrap 1 chicken breast in wax paper. With a mallet, pound until it's approximately 1/2 an inch thick. Repeat with second chicken breast, and set aside. Take half the bacon, and fry it in a skillet. When finished, drain grease into a bowl and set aside. Put 1 tablespoon of grease back into the skillet. Cut the chicken breasts in half, and place all 4 pieces in skillet. Cover, and cook on medium-low heat for 4 minutes. Flip, and place enough bacon on the chicken to cover it. Then place 1 or 2 slices of cheese (enough to cover the chicken and bacon), cover, and cook for another 4 minutes. When it's done, remove from pan, and serve on a roll.

If you only have a small skillet, do 2 halves at a time. Just remove them from the pan and repeat the process with the second set of chicken breast halves.

For variety, you can sprinkle salt & pepper on the chicken before cooking. You can also change the bacon to regular if preferred. And the cheese can be anything you like (America, Provolone, Cheddar, Monterey Jack, etc). You don't need anything else for the sandwich, but if you like, you can add lettuce, tomato and onion.

DR Pepper Flank Steak

I tried this at the local Super Supper a few months ago and we LOVED it. I got an email from them and checked out the menu - it was on it this month so I picked two up. We're going to try to duplicate it. I think this is the recipe!

to freeze - put the steak & marinade in a bag. In a sandwich bag put the dry rub. In another bag put a cup of the marinade (pre meaty marinade. For mine, I used 1 cup Dr Pepper and a tablespoon of the rub mixture). Apply the rub before grilling and boil the small bag of marinade for a sauce.

Ingredients

* 1-1/2 to 2 pounds flank steak
* 16 ounce bottle Dr. Pepper soda
* 4 cloves garlic, peeled
* 2 cinnamon sticks
* 2 tablespoons grill seasoning:

Ingredients for grill seasoning:
* 4 tablespoons Kosher salt
* 3 tablespoons Chili powder
* 2 tablespoons dried granulated garlic
* 2 tablespoons sugar
* 2 tablespoons ground cumin
* 2 tablespoons ground black pepper
* 1 tablespoon ground thyme

Directions

* In a large bowl, combine Dr. Pepper, garlic cloves and cinnamon sticks.
* Place flank steak in shallow dish and pour Dr. Pepper mixture over top.
* Cover tightly with foil and refrigerate 12 hours turning once during marinating time.
* Mix all ingredients for grill seasoning and store in tightly sealed container.
* When steak is done marinating, remove from refrigerator and pat dry with paper towels.
* Prepare grill to medium-high heat.
* Season both sides with grill seasoning.
* Grill 3-4 minutes per side. Never cook flank steak past the medium-rare stage or it will end up being very tough.
* Remove from grill, cover loosely with foil, and let rest for 5 minutes.
* Cut aross the grain into 1" slices.
* To use as fajita filling, warm tortillas and fill with steak and choice of toppings.

Taco Soup (or dip, it's pretty thick).

Package of Hamburger (cook it up)
Add
One package ranch dressing
One package onion dip powder
One package taco powder
One can kidney beans
One can chopped tomatoes with peppers
One can corn with peppers

Mix it all together on the stove. Put some cheese on top if you want. I use it as a dip but it's "technically" called a soup. It's Really good.

It's excellent, and easy to make. yummy

http://www.recipegoldmine.com/cak...ide13.html

Peach Velvet Upside-Down Cake
2 tablespoons margarine
1/4 cup light brown sugar, packed
1 (1 pound) can sliced peaches, drained
9 maraschino cherry halves
1 1/3 cups Bisquick
3/4 cup granulated sugar
3/4 cup milk
3 tablespoons margarine
1 egg
1 teaspoon vanilla extract

Preheat oven to 350 degrees F.

Melt 2 tablespoons margarine over low heat in 9-inch round layer pan. Sprinkle with brown sugar; arrange peach slices and cherries in pan. Set aside.

In mixer bowl mix Bisquick, sugar, 1/4 cup of the milk, 3 tablespoons margarine, egg and vanilla extract. Beat at medium speed 1 minute. Add remaining 1/2 cup milk; continue beating for 30 seconds. Pour batter over fruit. Bake for 40 minutes or until done.

Invert at once over serving plate. (Allow pan to remain over cake so sugar will run down over cake.)

Serve warm, plain or with whipped cream.
I made this last night and it was delicious and very easy to make :yum:

  • 10 Ritz crackers, crushed (about 1/2 cup of crumbs)
  1. Preheat oven to 400 degrees F. Mix mayo, cheese and pepper until well blended; set aside.
  2. Place salmon on foil-lined shallow baking pan. Drizzle evenly with lemon juice. Top with cheese mixture; spread to evenly cover salmon. Sprinkle with cracker crumbs.
  3. Bake 12 to 15 minutes, or until salmon flakes easily with fork.

Makes 4 servings.

I made this one tonight and it was also quite tasty.
