Put the Lime in the Coconut Muffins


These muffins are a blend of two recipes. They have a wonderful "Island" taste and combine my families love of Key Lime Juice and Coconut.
2 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup milk
2 large eggs, lightly beaten
1/4 cup vegetable oil
1/2 cup key lime juice
1-1 1/2 cup sweetened flaked coconut

6 servings
35 minutes 10 mins prep

1. Combine flour, sugar, baking powder and salt in mixing bowl.
2. In a separate bowl, combine milk, eggs, oil and Key Lime Juice.
3. Stir liquid ingredients into dry ingredients just until all are moist, do not overmix.
4. Spray Large muffin tins lightly with cooking oil.
5. Layer batter and coconut by filling tins 1/2 full with batter, then 1 tablespoon of coconut, then fill to about 1/4 inch from top with batter and top with 1 tablespoon of coconut.
6. Bake at 400 degrees for 25-28 minutes, until tops are brown and the coconut is toasty. Remove from oven and let cool for 5 minutes, run a knife around the muffins and place on serving dish or store in airtight container.

Fast easy chicken (made it last night)

Thawed deboned chicken (any part(s) work)
salt
pepper
lemon juice
favorite hot sauce

Slice the chicken up and down and left and right (or just stab with a fork) - just to make openings for the spices
dab on the salt pepper and lemon on top and top with your favorite hot sauce
mash it around with your hands to spread the spices out
cook on the foreman grill

15-20 mins later - DELICIOUS. Excellent with bread, rice, or vegetable sides. It was so good I was just eating it with me hands.

Pot Roast

2 lb. roast (I use eye of the round roast but I'm sure there are better cuts out there)
1 can Golden Mushroom soup
Potatoes
Carrots
Salt & Pepper

Preheat the oven to 350 degrees. In a glass baking dish put the roast and cut up potatoes and carrots. Cover the contents of the dish with the can of golden mushroom soup. Add a little salt and pepper and cover with foil.

Bake for about 3-3.5 hours. When it's done the meat should easily flake apart and the potatoes and carrots should be soft. It's very good and very easy yummy

OK, I'll throw in my favorite recipe, I got this from my old college roommate. I'm sure he got it somewhere, but I'm not sure where.
Pork Camembert
Ingredients:

3/4 - 1lb pork tenderloin
2 tbs butter
3 tbs sparkling dry cider or dry white wine
1-1 1/2 cup creme fraiche or heavy whipping cream
2 tbs TOTAL chopped fresh mixed herbs, such as marjoram, thyme, and sage
1 camembert cheese wheel (8 ounces), rind removed (5 ounces without rind),
sliced
4 tsp Dijon mustard
freshly ground black pepper to taste
fresh parsley to garnish if your a pansy

Slice the pork tenderloin crosswise into small steaks about 3/4-inch thick.
Place between two sheets of grease proof paper or clear film wrap and pound
with the flat side of a meat mallet or roll with a rolling pin to flatten to
a thickness of 1/2-inch.
Sprinkle with black pepper.

Melt butter in a heavy frying pan over medium-high heat until it begins to
brown then add the meat. Cook for 5 minutes, turning once, or until just
cooked through and the meat is springy when pressed.
Transfer to a warmed dish and cover to keep warm.

Add the cider or wine to pan and bring to a boil, scraping the base of the
pan with a wooden spoon. Stir in the cream and herbs and bring back to a
boil.

Add the cheese and mustard and any accumulated juices from the meat. Add a
little more cream if needed and adjust seasoning.
Serve pork with the sauce and garnish with parsley if your a pansy.

You will have extra sauce, I love to pour it over bread, as a "gravy" for mashed potatoes
If you do not want the extra gravy, divide each ingredient in half except the pork
and the cider.

Pumpkin Spiced and Iced Cookies

2 1/4 cups all-purpose flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter
1 cup granulated sugar
1 can (15 oz) pumpkin
2 eggs
1 teaspoon vanilla
2 cups (12 oz package) semisweet chocolate chips
1 cup chopped walnuts (optional)
Vanilla Glaze


Preheat oven to 375 Grease baking sheets

Combine flour, pumpkin pie spice, baking poser, baking soda and salt in medium bowl. Beat butter and granulated sugar in large mixer bowl until creamy. Beat in pumpkin, eggs and vanilla extract. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto prepared baking sheets.

Bake for 15-20 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes; remove to wire rack to cool completely. Spread or drizzle with vanilla glaze.

Vanilla Glaze: Combine 1 cup powdered sugar, 1 to 1 1/2 tablespoons milk and 1/2 teaspoon vanilla extract in small bowl. Mix well.

Libby's is the only way to go. Honest.

Simply replace the total dry spices with "pumpkin pie spice" and you are set.

1 - 2 cans (or jars) salted peanuts
1 large bag of candy corn

In a large bag, combine the salted peanuts and candy corn. Put a top on the bowl and give it a good shake.

Pop the top off, grab a big handful and enjoy. You'll be surprised, it tastes exactly like Reese's Peanut Butter Cups!

thanks I'm at the computer at work and it sucks...it's so slow I didn't want to do a search...
one note on the recipe...it seems to take much longer to bake til set when I bake them... perhaps over an hour... just keep checking it.
