1 cup (2 sticks) butter, softened
1 1/2 cups sugar, plus 2 T for coating
2 eggs
2 3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
2 T cinnamon
Preheat oven to 350 degrees. Cream butter and sugar for 3-4 minutes until light. Add eggs 1 at a time, mixing completely after each.
Stir together flour, cream of tartar, soda and salt. Beat the dry ingredients into the butter and sugar mixture until blended - adding a little at a time.
Refrigerate dough for about 20 minutes until firm enough to roll into balls.
Combine the cinnamon and remaining sugar
Roll dough into walnut sized balls and roll into sugar and cinnamon mixture. Place on baking sheet and bake 8-10 minutes.
To freeze - roll dough balls in sugar mixture and place on a cookie sheet. Freeze and place in a freezer bag for later use. Allow dough to soften at room temperature before baking.
INGREDIENTS
2-3 pounds salmon filet (fresh filet of halibut works well also)
Marinade
2/3 cup tamari or soy sauce
1/2 cup extra-virgin olive oil
2 teaspoons toasted sesame oil
2 tablespoons grated ginger root
juice of 1 large lime
4 cloves garlic, minced
4 scallions, finely chopped
Garnish:
2 red peppers, cut into big slices
DIRECTIONS
1. To Marinate Salmon:
Put Tamari, oils, ginger root, lime juice, garlic, and scallions in a small mixing bowl; whisk together. Place Fish in a shallow pan and pour marinade on top. Allow to marinade one hour in the refrigerator.
2.To Grill Salmon:
When the coals in your grill are just becoming white, remove the fish from the pan and place fish on the grill, skin side down. Brush the top with part of the marinade and grill the fish for about 5 minutes. Turn the fish over and remove the skin; it should come off easily. Brush the top with marinade again and grill for 3-4 minutes more, until the fish is tender at the thickest part. Flip it over and serve grilled side up. Roast chucks of red peper on grill while cooking fish and serve as a garnish.
Now the recipe is intended to be broiled..or grilled. But if you choose to use it in the microwave, i recommend cooking only a couple filets at a time, otherwise they dont cook fully, and end up a bit raw. so do two at most per bag in the microwave, and remember, dont dump the marinade, use it in the bags and/or cook the fish in the marinade if you're broiling it. it turns into a great sauce for over rice...

One-Skillet Ranch-Style Beef Supper
INGREDIENTS
1 lb lean ground beef
1 box (8 oz) seasoned rice & black beans (I used Goya)
1 can (14.5 oz) diced tomatoes with green chilies (I couldn't find a big can so I used two of the small cans)
1 box (10 oz) frozen corn kernels
1⁄2 cup packed cilantro
1 cup (4 oz) shredded sharp Cheddar cheese
PREPARATION
1. Cook beef in a large nonstick skillet over medium-high heat, breaking up clumps of meat with a spoon, 4 minutes or until beef is no longer pink.
2. Stir in rice and beans, tomatoes, corn and 21⁄2 cups water. Bring to a boil; reduce heat, cover and simmer 20 minutes or until the water has been absorbed.
3. Meanwhile chop cilantro. Sprinkle on servings along with the cheese.
(Next time I make this I am going to change it up. I am going to use sausage instead of beef and jambalaya style rice and beans instead of the black beans & rice. Then add some green pepper and it will be like a quick jambalaya
Slow Cooker Jambalaya
Ingredients
1 large onion, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
2 medium celery stalks, chopped (1 cup)
3 garlic cloves, finely chopped
1 can (28 oz) Progresso diced tomatoes, undrained
2 cups chopped fully cooked smoked sausage
1 tablespoon parsley flakes
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red pepper sauce
3/4 pound uncooked peeled deveined medium shrimp, thawed if frozen (I haven't used this before, I have just used the sausage)
4 cups hot cooked rice
Preperation
1. Mix all ingredients except shrimp and rice in 3 1/2- to 6-quart slow cooker.
2. Cover and cook on low heat setting 7 to 8 hours (or high heat setting 3 to 4 hours) or until vegetables are tender.
3. Stir in shrimp. Cover and cook on low heat setting about 1 hour or until shrimp are pink and firm. Serve jambalaya with rice.

Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturers directions for layering ingredients and choosing a temperature.

1/2 c. chopped red onion
1/4 c. low-sodium bacon (cooked crisp)
1/2 c. grated mozzarella
1/2 c. grated sharp cheddar (I use 2% reduced fat)
1/2 c. chopped apple (Fuji or Wash. State yellow work best)
2 1/2 tbsp. red wine vinegar
1 c. Hellman's mayo
1/3 c. sugar
Mix first 6 ingredients together, set aside. Using whisk, mix vinegar, mayo and sugar until smooth. Pour over broccoli mix and refrigerate for 20-30 minutes to allow flavors to mix.
*You can also use plain white vinegar for this recipe but the red wine vinegar tastes best, IMO.
**You can make this with 2-3 tbsp. of sunflower seeds to add more magnesium and Vitamin E.

Mix together, marinate for 20-30 minutes. Serve with Fritos Scoops.

* 4 cloves garlic
* 4 cans Great Northern White Beans
* 1-4 ounce can diced green chilies
* 2 cups cooked shredded chicken
* 2 cups chicken broth
* 2 teaspoon cumin
* 1 teaspoon cayenne
* 1 teaspoon oregano
Steps
1. Drain beans
2. Saute onions and garlic with butter until soft
3. Add everything else and you're done.
4. Well, you need to simmer it all to let it warm up.
5. Serve in a mug with some fresh chopped parsley on top.
6. Wait 15 minutes and Doug will be over.

he is a san diego local tv show on local channels only...he has a book thats awesome... really down to earth guy...no frills and very easy to make stuff...nothing fancy with his recipes but really tasty...i've met him before at a local target and we chatted for a good 20 minutes
