White bean chicken chili
  • 3 15 to 15 1/2 oz cans Great Northern, pinto, or white kidney beans, rinsed and drained
  • 2 1/2 cups chopped cooked chicken
  • 1 cup chopped onion (1 large)
  • 1 1/2 cups chopped red, green, and/or yellow sweet pepper (2 medium)
  • 2 fresh jalapeno peppers, seeded and chopped
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano, crushed
  • 3 1/2 cups chicken broth
  • Shredded Monterey Jack Cheese
  • Broken tortilla chips


1. To cook chicken, poach 3 or 4 skinned and boned chicken breast halves in boiling water or chicken broth, covered, for 12 to 14 minutes or until no pink remains. Drain, cool the chicken slightly, and then chop.

2. In a 3 1/2 or 4 quart crockpot combine the drained beans, chicken, onion, sweet pepper, jalapeno peppers, garlic, cumin, salt, and oregano. Stir in chicken broth.

3. Cover and cook on low heat setting for 8 to 10 hours or on high heat setting for 4 to 5 hours. Ladle soup into bowls. If desired, top each serving with some of the cheese and tortilla strips.

Heyyy I have something to contribute!

It's Broiled Salmon glazed with a few spices and lemon.

You need:
1/4 stick of butter
Ground dill weed (Small amount, about half a table spoon)
Parsley (about 1/4 table spoon)
And about 1 table spoon of lemon juice
Sliced salmon
Salt
Pepper
Broccoli/Green beans/Asparagus
Olive oil
An oven set to broil.

What to do:
Melt the butter and add the parsley, dill, lemon, salt, and peper to to the bowl with the butter. (Mix) Put in a few shakes of salt, and 1 shake of pepper.
Spread the olive oil onto both sides of the salmon. (Cook with dark side down)
Spread a layer of the butter lemon mix onto the top of the salmon.

Start water to boil and after you have the salmon in for 5-8 minutes, drop in the veggies.

Depending on how thick the piece(s) of salmon is you may have to cook it anywhere from 10-25 minutes. So you started cooking it with the bottom side down. After 5 minutes, flip it over carefully (it might tear a little) While it is out of the oven, put more of the lemon butter on and if you want sprinkle some of the parsley over it for extra flavoring.
After 5 more minutes flip it over one last time, and check out how done it is. Most likely it will have to go back in, and after that just check it at short intervals.
It's done when its not pink anymore. Don't cook it too long or it will be dry!

My family has always loved tomato noodles.
brown 1 lb of hamburger (do not drain) with 1 chopped onion
add to it three cans of peeled tomatoes heat to a simmer
take 1 bag of extra wide egg noodles fully cooked then drain.
Mix everything together in 1 bowl. Serve with warm bread and butter. Easy prep. Easy clean up. And fast meal for busy moms

  • 2 regular sized cans of refried beans
  • 1 lb. of ground beef
  • 1 packet of taco seasoning
  • 1 large container of sour cream
  • 1 large jar of salsa
  • 1 bag of cheddar cheese

Brown ground beef and prepare with taco seasoning as indicated on package.

In casserole dish (I think it's 13x8) layer refried beans, seasoned ground beef, sour cream, salsa, and cheese (in order as listed).

Bake at 350 degree for 30 - 40 minutes or until heated through.

Enjoy with tortilla chips!

My family always had bean dip night... one of our favorite Friday meals! It also reheats really well!

This is the original red velvet cake recipe. I got it years ago from the Adams Extract booth at the State Fair of Texas. It's the same recipe my grandmother used to use when I was a little girl and it makes a wonderful red velvet cake. Making a Red Velvet cake isn't hard, there's just a few more steps in mixing the ingredients as you don't just dump it all into a bowl.

My grandmother always used a cream cheese icing instead of the one listed on the original recipe.


Red Velvet Cake


Cake:

1/2 c shortening
1 1/2 c sugar
1 tsp salt
2 eggs
1 tsp vanilla
1tsp butter flavoring
1 1/2 oz red food color
3 Tbl (level) cocoa
2 1/2 c cake flour sifted
1 c buttermilk
1 Tbl vinegar
1 tsp soda

1) Preheat oven to 350 degrees.
2) Cream shortening, sugar, salt eggs, vanilla and butter flavoring.
3) Make a paste of cocoa and food color. Add to first mixture.
4) Alternately add flour and buttermilk.
5) Mix vinegar and soda in small bowl. Add to batter. Blend.
6) Bake in 3 - 9" or 10" pans for 20-25 minutes at 350 degrees or until toothpick inserted in center comes out clean.
7) Let cool completely.
8) Cover with frosting.

3 Tbl. flour

1) Cook flour, salt and milk until thick, stirring constantly.

4) Add vanilla and butter flavoring. Combine with first mixture. Beat well.
