Corned Beef Brisket, cabbage, red potatoes, baby carrots, and a vidalia onion in the crockpot. Its whats for supper! Will probably make some cornbread also. It is so easy and so good!

It's so damned cold here I'm considering a soup or chowder. Something that will go with cornbread. I have a buttermilk cornbread recipe that is out of this world.

Here is one of the most delicious recipes my mom ever makes (I love this so much)


Ingredients:


1/2 chopped green pepper (1/2 of a pepper chopped up)
1/2 chopped onion (1/2 of an onion chopped up)
1/2 lb ground beef
1 lb can tomatoes
6 oz can tomato paste
1/2 cup water
1/2 tsp salt
1/4 tsp pepper
1/2 lb mostaccioli noodles
1/2 lb block cheese (From Aldis)
bay leaf
1 Jar of Speghetti Sauce (The "Flavoured with Meat" Kind (32oz Jar)) from Aldis



Prep:

In oil,saute onion & pepper until tender. Add meat & cook until brown. Stir in tomatoes,tomato paste,water,salt,pepper,bay leaf. Add Ragu Speghetti Sauce, Simmer.

Cook Mostaccioli noodles as directed. Cut Velveeta in thin slices.
In a 2qt casserolo,arrange alternate layers of noodles,sauce and cheese.

Bake @ 350 for 30 mins



The Result:

The Best tasting dish you'll ever have!!!!!!!!!

The reason Irish people leave Ireland these days is to get away from corned beef and cabbage. I suspect that's also part of the reason DH married me, I'm german ancestry and we don't do corned beef, sauerbrauten yes, corned beef no.

Cock-A-Leekie Soup, going to try this one tomorrow, DH has had a similar version of this soup and says it's very tasty. You can leave out the prunes if you're not a fan. Nice thing is, there's no potatoes in it, which is good if you're doing low carbs.

Ingredients



Method

  1. Heat the oil in a large heavy-based saucepan until hot. Fry the chicken pieces in batches until golden brown, then remove and set aside. Add the bacon, carrots, celery and leek tops, and fry for 5 mins until it all starts to brown. Pour off any excess fat.
  2. Splash in the wine and boil rapidly, scraping the bottom of the pan. Return the chicken pieces with the herbs and add enough cold water to cover. Slowly bring to the boil, then simmer for 40 mins until the chicken is tender.
  3. Remove the chicken to a plate, cover with foil and leave to cool slightly. Strain the soup into a clean saucepan and discard all the other ingredients. Leave to stand for a few mins and skim off any fat that rises to the top. Pull the meat from the chicken bones and tear into large chunks.
  4. Simmer the soup with the chicken, leeks and prunes for another 20-30 mins. Season to taste and serve with really good bread.
