Wanted to share a leftovers idea ... I discovered it this week.

Monday

- baked chicken with baked potatoes
(thought about making potato salad for the next day with the leftover potatoes)

Tuesday

from the chicken leftovers I made:
Chicken and Sausage Etouffee w/rice

The Next day

I still had rice leftover
So I made Red beans and Rice
Only had to cook the red beans..not the rice.

Pan Seared Tuna w/Onion Mango Relish
by Chef "Tinman"


Ingredients:

1/4 Cup Lime Juice
1/4 Cup Soy Sauce
4 ea Tuna Steaks*
1/2 Tbl Grated Ginger
2 Tbl Canola Oil
Pepper Mixture to Coat (2 parts black pepper, 2 parts white pepper, 1 part red pepper)

Salsa:

2 Tbl Olive Oil
1/2 Cup Mandarin Oranges, drained
1/2 Cup Diced Mango, (drained if canned)
1/2 ea Red Onion, diced
1/4 Cup Chopped Cilantro



• Combine Lime Juice, Soy Sauce and Ginger and set aside
• Rinse fish steaks and pat dry
• Coat steaks on all sides with pepper mixture
• Place heavy skillet over heat and add Canola oil
• Heat steaks in skillet for 2 minutes each side
• Pour Lime Soy Mixture over steaks and continue cooking 2-2.5 minutes each side
• Remove from heat
• Finish with Onion Mango Relish


• To create relish, combine olive oil, mandarin oranges, mango, onion and cilantro in a bowl, let sit over night if possible
• Serve over the fish or on the side


Alternate Service "Tuna Tacos"
• Alternate service would be to flake fish and serve with relish, sauce and cabbage inside a flour tortilla ("Tuna Tacos")

Stuff a Flour Taco Tortilla with Shredded Cabbage
Place Flaked Tuna onto Cabbage
Top with Mango Relish and small amount of Soy-Lime Sauce

Voila...Tuna Taco.....



*Swordfish may be used in lieu of Tuna

Pecan Encrusted Redfish w/Mango Mustard Sauce
by Chef "Tinman"


Ingredients:

1/2 Cup Dijon Mustard
1 lb Fresh Gulf Redfish fillets [landbigfish.com], (4) (Red Drum)
1 Cup minced Pecans*
3 tbl Olive Oil (use Canola if you want something lighter)
3 ea Juice of Lime (3)
1/4 Cup Chopped Cilantro

Sauce:

1/2 Cup Diced Mango
1/2 Cup Orange Marmalade
1/4 Cup Whole-Grain Mustard
1 tbl Horseradish
1/4 Cup Lime juice


• Rinse fish fillets and pat dry
• Brush Dijon Mustard over fish, cover both sides to coat
• Roll Redfish in the minced pecans to create pecan crust, cover both side to coat
• Heat Olive Oil in a large sautpan and add the Redfish.
• Brown well on both sides, when brown add the juice of 3 limes and fresh cilantro
• Cover the pan and let simmer for 3-4 minutes until fish is cooked through

• To create sauce, combine mango, marmalade, mustard, horseradish and lime juice in a blender and blend smooth
• Serve over the fish or on the side








*Place pecan pieces into the freezer for a few hours prior to putting them into the food processor. This helps to reduce the amount of oil extracted during the mincing process.

I call this body builder goop.. Its REALLY tasty, and fills you up quick..

8 Cups of Oats
10-12 Scoops of Protein Powder (Vanilla or Choclate)
1 Box of Instand Pudding

I usually use vanilla protein power and vanilla pudding mix, make sure to cook the oats first, it is a better consistancy.

Mix, let sit, and eat. Smilie

Haven't tried this one yet but it sounds so good, I wanted to share the recipe.

Beer Cupcakes!


Despite the addition of Guinness, these cakes are not at all bitter; instead, the beer adds richness and moisture, and balances the sweetness of the sugar. Working from another Nigella recipe, this one the Guinness Cake from Feast, I substituted brown sugar for white to add depth of flavor, and made tiny cakes instead of a large one in a springform. Topped with a cream cheese glaze, these are a crowd-pleasing, not-too-sweet dessert (and, if you call them muffins instead of cupcakes, and play up the beer angle, you can easily pass them off to guys). Theyre also super-easy.
Cake
  • 1 cup Guinness
  • 1 stick, plus 1 tb, unsalted butter
  • 3/4 cup unsweetened cocoa
  • 2 cups dark brown sugar
  • 3/4 cup sour cream
  • 2 eggs
  • 1 tb vanilla extract
  • 2 cups flour
  • 2 1/2 tsp baking soda
Glaze*
  • 8 oz cream cheese
  • 1 1/4 cups confectioners sugar
  • 1/3 cup milk
Preheat oven to 350; butter a muffin tin.
Combine the Guinness and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter. Remove from heat, and whisk in the cocoa and sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then add to the beer mixture. Sift together the flour and baking soda, and fold into the batter. Pour into muffin molds and bake for 25 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin tin, and cool completely on a rack.
Using a mixer, whip cream cheese until smooth, sift in sugar, and beat. Add milk, and beat until smooth. Spread glaze over cooled cupcakes.
*To create a thinner glaze, use a tablespoon or two more milk; for a topping more akin to icing, use less milk, and perhaps more sugar. In either case, add a little sugar or milk at a time, mix, and check for desired consistency.

6. Bake until lightly brown, about 35 minutes. Cool the logs for 5 minutes.
7. Using a serrated knife, cut the logs crosswise into 1/2-inch-thick diagonal slices. Arrange the biscotti cut side down on the same baking sheet.
8. Bake until the biscotti are pale and golden, about 25 minutes.
9. Cool the biscotti on the baking sheet for 5 minutes. Using a metal spatula, transfer the biscotti to a rack and cool completely.
10. Melt the chocolate chips in the microwave, stirring every 20 seconds, about 1 1/2 minutes total. Dip 1 cut side of each biscotti into the melted chocolate. Gently shake off the excess chocolate.
11. Place the biscotti, chocolate side up, on the baking sheet. Refrigerate until the chocolate is firm, about 35 minutes. Dip a pastry brush in the cocoa, then lightly brush the cocoa over the chocolate on each biscotti.
12. The biscotti can be made ahead. Store them in an airtight container up to 4 days, or wrap them in foil and freeze in resealable plastic bags up to 3 weeks.

TheUrge's Kick Ass BBQ Ribs:

Needed:
1 pkg of Country Style Pork Ribs
1 Bottle of BBQ Sauce (Your Choice)
Famous Dave's Rib Rub (or any rib rub)
Cookie Sheet
Foil
Patience

1. Preheat oven to 200 degrees

2. Remove the membrane from back of ribs if necessary

3. Take the Famous Dave's rib rub, and sprinkle/rub into both sides of the meat. Use liberally.

3. Wrap ribs in foil either individually or together, and lay on Cookie Sheet.

4. Take another large, long piece of foil and completely wrap the cookie sheet altogether. You want to ensure that the cookie sheet is sealed, so no moisture will escape.

5. Set your timer and let the ribs cook for 7 hours @ 200 degrees. (Yes, 7 hours)

6. Once the timer goes off, take them out and remove the foil from the ribs. Drain any juices that have accumulated and discard them.

7. Don't shut off the oven yet! Go ahead and now increase your oven temperature to 350 degrees

8. Take your choice of sauce and start liberally pouring it over all the ribs. It's not necessary to flip the ribs, but you can if you want to coat both sides. Make sure the ribs are covered completely by the sauce.

9. Put the ribs back in the oven on the cookie sheet and let them cook for another 45 minutes. You won't want to cover the cookie sheet this time, leave it uncovered. This will allow the sauce to carmelize a bit, but not enough to dry the ribs out.

10. Once the timer goes off again, the ribs are done! Enjoy! The meat will be literaly falling off the bone.

Onions sliced pretty thinly... they cook faster and absorb more flavor from the orange juice and chicken broth.
