Sauted Colard Greens with Almonds and Carrots

1 Bunch Collard Greens, washed and de-veined
1 Tbs Oil
1/4 Cup Sliced Almonds
1/4 Cup Sliced Carrots
1 Tbs Lemon Juice
1/4 tsp Salt
Black Pepper to taste

Saute carrots and almnds in olive oil over medium heat for 1-2 minutes. Add greens, lemon juice, and salt. Stir well and cover for another few minutes, until greens are tender, stirring often. Serve Immediately with cracked pepper on top.

4 or 5 boneless skinless chicken breasts.
1 can of cream of chicken soup.
1 cup of sour cream
1 tablespoon of lemon juice
Pepper
1 pack of Ritz crackers soaked in 3/4 stick of melted butter
Sesame seeds


1. Cut chicken breasts up into 1 inch pieces.

2. Mix together soup, sour cream, and lemon juice.

3. Add pepper to mixture (to taste).

4. Mix soup mixture with chicken.

5. Melt 3/4 stick of butter and soak crushed crackers in butter.

6. Sprinkle on top of chicken/soup mixture.

7. Sprinkle on sesame seeds if desired.

8. Bake at 350 degrees for an hour.

As posted in another thread PassionateGray suggested I contribute my recipe for Chocolate gravy.


Chocolate Gravy

3 tbsp cocoa
2 c. milk
1 1/2c sugar
2tbsp flour
1 tsp vanilla
1 tbsp butter
pinch salt

Mix together all dry ingredients in saucepan add 1/4 c milk make paste (like a roux in traditional gravies) While you are making the paste heat remaining milk in microwave til hot. abt 2 min.

Gradually whisk microwaved milk into the paste mixture. Cook til thickened and bubbly. Remove from heat whisk in butter and vanilla. Serve immediately over warm biscuits.

I've been browsing recipe sites all morning and decided that tonight I want to make baked mac and cheese, chicken enchiladas, and caramels. That's a good mix, right? yummy Stick Out Tongue

I will share the recipes if they turn out good Blush

Okay I guess that kind of sounded weird. I'm not going to make both enchiladas and mac and cheese, it's one or the other. They both sound good right now though.

Red Beans & Rice


1/2 chopped onion
1 link sausage
4-5 strips bacon
2 cans blue runner red beans (creamy, creole style)
Seasoning (cajun)
Garlic and Onion Powder, Salt, Pepper

Cooked white rice


Brown onions, then add bacon 'til almost cooked
Add chopped sausage, then cans of red beans and 3/4 to 1 cup of water

Season with seasoning you prefer.

Serve over rice

That looks good, but what are "creole-style red beans"? Would it be easy to substitute? I don't think I've ever seen them here. I miss red beans and rice ever since we went to New Orleans (5 years ago). Unfortunately, we no longer eat red meat, so I'd have to use chicken or turkey sausage and turkey bacon. Licklips

So, I came across this recipe for salmon and since I usually make it on the grill, I was looking for something different. This is definitely different. Of course in order to make this, I'd have to go buy salmon...and whiskey laugh out loud Salmon isn't really cheap here anymore. We usually buy the whole Alaskan King Salmon and then I portion it, vacuum seal it and freeze it so we have fresh salmon for a while. No salmon lately, though. Frown

Anyways, here is the recipe if anyone wants to try it before me. Big Grin


Salmon fillet is baked in a mixture of maple syrup, whiskey, rosemary and thyme.

INGREDIENTS:
• 1/2 cup pure maple syrup
• 1/4 cup bourbon whiskey
• 2 tsp rosemary
• 1 tsp thyme
• 2 Tbsp canola oil
• 1 lb salmon fillet (I prefer salmon, although walleye and perch work well, too)

METHOD:
Heat oven to 450 degrees. Place salmon fillet on large sheet of heavy-duty foil and crimp sides to make a bowl. (The trick is to keep the fish submerged in liquid and keep liquid from leaking; you can also use a glass ovenproof dish if desired.) Blend maple syrup, whiskey, rosemary, thyme, and oil in small bowl. Pour over fish until covered. Add more whiskey or syrup if necessary. Bake uncovered at 450 degrees for 10 minutes (for a 1-inch thick fillet).

NOTES:
Nice, subtle caramel/whiskey taste. Not overpowering. Great with a side salad and rice.

Number of servings: 2 or 3 servings

The pure maple syrup is essential in this recipe. I have found that other variations leave recipes too sweet and thick. I used olive oil instead of canola because I had it on hand and I enjoy the olive flavor. I wouldn't change much the next time (and I would make it again!) except that the fish cooked a bit faster than 10 minutes This might depend on the thickness of the fish as well as your preference of rareness. A nice addition might be garlic or shallots, however, the end result was quite nice. I would be interested to see how this works with beer and wine and different herbs.

On the side, I made a cauliflower and carrot sautwith freshly ground black and red pepper. I also mixed together a spinach salad and had warm bread with garlic and olive oil. Any type of warm veggie or even a veggie risotto would complement the fish and whiskey flavor well.
