Mine have never frozen into a solid block of ice. You can bit into the right from the freezer. The frosting is more frozen than the cookie. (I use real butter is probably why) They come up to room temp in just a few minutes too.
I lay them in a single layer on a cookie sheet and freeze. They don't take long - maybe 20 - 30 minutes. By the time I have filled all my cookie sheets the first couple are ready so I can keep rotating and working. Then I layer them in ice cream buckets, plastic containers, whatever. I do put wax paper between the layers but I have done it without and it isn't necessary.
My son wanted them for his grad party instead of cake. I am ashamed to admit that my son is a freak of nature and doesn't care much for cake. We think he was switched at birth. I did a shiny glaze on his so I didn't want to layer. I got new pizza boxes and used those.
Since I live where it is usually below freezing from Thanksgiving on, I normally put my cookies in the garage rather than hogging up freezer space.
Most cookies will freeze just fine and nearly all dough will. When I would make chocolate chip cookies I would often make a huge batch of dough then freeze part of it. Roll the little round dough balls, freeze on a cookie sheet, then store them in a container. Take out dough balls - go straight from freezer to oven.

Anyone have a Barney 101 for Rite Aid? I had given up 4 years ago when every time I went in the store on a Sunday, they were sold out of what was in the ad and the local store will NOT do rain checks.
I'm hoping my mom & dad come down so all (almost) my family will be here. My brother doesn't get to come down because of Army obligations but I'm very excited.

I usually make LOTS of candy for Christmas....the easy stuff. Chocolate peanut clusters, peanut butter balls, ritz crackers with peanut butter in the middle covered with chocolate, chocolate covered pretzels..etc. etc. So easy and so yummy!

HOMEMADE JELLIED CRANBERRY SAUCE
INGREDIENTS:
1 cup sugar
1 cup water
1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries
DIRECTIONS:
Combine sugar and water in a medium saucepan. Bring to a boil; add cranberries, return to a boil. Reduce heat and boil gently for 10 minutes, stirring occasionally.
Place a wire mesh strainer over a medium mixing bowl. Pour contents of saucepan into strainer. Mash cranberries with the back of a spoon, frequently scraping the outside of the strainer, until no pulp is left.
Stir contents of bowl. Pour into serving container. Cover and cool completely at room temperature. Refrigerate until serving time.
Makes 1 cup.

I make this Apple Pie [foodnetwork.com] for both Thanksgiving & Christmas since I discovered the recipe a few years ago...it is the BOMB! I even use a store bought crust because it is fairly labor intensive but worth every bite

trader joes carries bottles of 100% pure not from concentrate no sugar added cranberry juice. wondering could one just use that with sugar that has been cooked? mix and then cool?

generally, i make all of the following each year because different people have different favorites--
turkey (roasted in oven, not deep fried southern style)
stuffing (what you guys call dressing)
mashed potatoes
sweet potatoes with marshmallows
glazed carrots
green beans
asparagus
coleslaw
cranberry jelly
dinner rolls
gravy
cheesecake
pumpkin pie
apple pie
choc chip cookies
in addition, each year i experiment with new side dishes and cook up a few new ones depending on what catches my fancy. i like looking at the recipes on the whole foods site, on barefoot contessa and on epicurious.com to see what i'll make.
also, i like making a diverse set of choices, because we don't stuff the fridge with tons of leftovers and eat the turkey day stuff several days in a row. instead before dinner we set aside generous helpings of all the sides, plus cuts of the bird. then after dinner we take paper plates and make up individual servings of the whole dinner. cover each plate with foil, pair with napkins, plasticware and drinks and drive around town to bring t dinner to the homeless. sometimes we get yelled at, sometimes we get suspicious looks, sometimes skepticism as to whether they should try it (people have been known to try poison the homeless, sadly), and other times we get big, broad smiles and god bless you's. the latter makes up for the others. and so it goes each year.
we do save some stuffing, mashed potatoes, asparagus, dinner rolls and dessert each year. those get wolfed down in munchie intermissions.

Oprah's Pomegranate Martini
1 1/2 cups pomegranate juice
2 ounces Absolute Citron vodka or white tequila
1 ounce Cointreau liquor
Cup of ice
Splash of sparkling water (optional)
Squeeze of lemon (optional)
Directions
Shake ingredients in a shaker and put in chilled martini glasses. Put pomegranate fruit into glass as garnish.

10 MINUTE NEVER FAIL MICROWAVE PEANUT BRITTLE
1 c. sugar
1/2 c. light corn syrup
1 c. raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2 minutes. Brittle should not get too brown. Stir in vanilla and soda until light and foamy.
Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.
