Just checking in.

Did not go to the doc's on Monday - between prepping to leave and still semi-ill hubby... (and an case of it's-stinking-cold-and-i-don't-want-to-go-out), well......... I rescheduled.

Not much to report. Monkey toddler arrived here with a 103.8 fever. Yay. Low and then down to pretty much no fever today, but she's been waking up every hour since 7:30 pm crying and coughing. It's going to be a long night... again. I hate that because I have felt very grouchy today. Frown

No q shopping here. Managed to spend some $$. Sick Hope to recoup when I get back. I'll need help on deals! hug

6 slices of bacon
1 Large Sauteed Onion (cut to size of ones choosing)
1 can of chicken stock
1-2 cans of condensed milk
1-2 can cheapest beer you can find (I use Milwaukee's Best)
1 box of Velveeta Pepper Jack Cheese (Diced to melt easier)
1/2 package of cream cheese
3-5 pounds Potatoes - Diced to various sizes

- First fry the bacon and pour the resulting grease into the crock pot. You could also cut and add the bacon or save it for a topping after wards but I personally am not fond of bacon which is why I let my "boys" eat them for breakfast and just use the grease.
- Then I saute the onions in the same frying pan and add them to the crock pot.
- Dice enough potatoes to varying sizes until crock pot is around 2/3rds full.
- Pour in one can of chicken stock
- Then add just enough beer and condensed milk to barely cover the potatoes.
- Stir then place the diced Pepper Jack Cheese on top without stirring again.
- Heat on high for around 2 hours or until well hot, then turn to low and add a half package of cream cheese.
- Once potatoes start to soften use a potato masher to mash some of the potatoes in the crockpot to help thicken the soup.
- Taste and season with additional onion powder and or salt & pepper to taste if necessary.
- The longer the soup cooks the better it is as with many crock pot foods. But with the dairy products it doesn't look too pretty when you first open the lid and needs to be stirred more often and before serving. I also usually end up stirring a bit more beer into it just before serving.

You can also serve with shredded cheese, oyster crackers, bacon bits, diced green onions or such stuff if wanted.

We went to LV last summer, same Hubby's conference here [marriott.com].. Such a amazing place.. but it was very hard with the kids, but went out during the evening to strips and then we drove to CA - disney land, then to san deigo zoo, sea world and lego land.. We went for about 10 days, very tiresome it is, at time time toddler was 6 months old, acid reflux baby.. but we did enjoy!

i don't recommend eating stuff till you are sick of it. you fall off the bandwagon b/c you can't take it anymore. when i was in school, my db would only eat ham and bologna so that's all my mom would pack for lunch. i don't think i've eaten bologna in 30 yrs, i got so sick of it. i do eat ham but not virginia ham that my mom would buy. i finally bought some last yr for the first time.

i didn't see my maternal grandmother as often as i wanted to b/c she lived a little far. one time i got both my brothers to agree to go see her on mother's day...and then my mom did not want to *share* her day with her mother. so we ended up not going at all. i regret that.

Good morning Wave went to bed at 2 am, and DD got up at 6:15 EEK! gonna need more than one cup of coffee this morning.. I guess I shouldn't complain, she slept over 8 hours without waking up, which she hasn't done in the last 2 weeks.. Seems like every night for the last 2 weeks or so she wakes up around 3 am.. Sometimes I try to be really diligent with getting her right back down, but the last few days I have been exhausted and just put her in the bed with me.. Didn't work today, so we are up and moving! Gonna be a long day!
We are finally heading to Chuck E Cheese today cause my DD wanted to go for her birthday but her grandparents were out of town. We usually get together with DH side of the family every 6 weeks or so and celebrate birthdays, but his parents have been traveling alot the last few months due to the sickness of their parents.. So, today we will be celebrating my oldest DS, my DD, and my SIL.. Guess they all get to enjoy CEC for their birthdays Teehee My SIL will be getting a nice set of calphalon pans for her birthday gift Smilie Hope she enjoys them as much as I have.

After the birthday celebration, I am hoping to finally hit target.. I have made a list.. finish, planters, KY Roll Eyes (Sarcastic), cereal, and I am gonna try the greeting card deal too.. Then, make a quick CVS run if all goes well!

Hope everyone is getting some good sleep this morning!

A while ago we got tons of free salad with coupons. I ate salad every single day for 3 weeks. I love salad..but after eating it everyday..I hated it. But I got over it quickly. I would love a salad!

Doughnut talk -- HyVee people. HyVee used to have excellent doughnuts and any more I just don't think they are very good. Is it just me or have they changed? Oh, when I say used to -- I am talking years ago. They used to be light and fluffy and their glazed were good. Now they are tough and chewy and the glaze is sticky.
