Atlast the day is here, we are leaving tonight..and I will be back in August.. i will have access to computers and internet and I will keep in touch..
I am going to undergo ayurvedic treatment for my knee issues and some ayurvedic therapy for hair..Went to dr here. he gave me blood work, no results yet. I have to call him again to find the result.. but no thyroid issues, know it from my routine annual blood work..lets us wait and see..Anyways I am sure I would love those hair massage and therapies

i need to go find spanish paprika, hot and sweet next wk for the blackened maple shrimp. there is a large independent natural/organic grocer about 10-15 minutes away that sells spices by weight, as much or as little as you want. i hope they have it there. wonder how the shrimp would be on skewers?

after this wknd, come hang out w/ us in the diet support group. losing weight is not a requirement. i don't think i've lost more than 4lbs in 8months. you can just post all the deliciously healthy food you eat and make the rest of us jealous. esp when we've been bad like i'm sure this wknd is going to be.
as for underwear, late 2005 i went to bangalore, india w/ dh who went for work. very interesting trip. i found pretty patterned jockey underwear in a dept store there, very cheap. they were different from the jockey underwear here, i don't know whether it was licensed or knockoffs. the sizing was different though. the saleswomen couldn't really help so i guesstimated. thank goodness i got the large instead of medium. indian cotton is inexpensive so maybe that's why the underwear was cheap.

shrimp is just fine on skewers. we've done that before. actually better in a way cos none of the marinade sticks to the pan. it all caramelizes on the shrimp. i just make it in the pan cos it's easier/less work and besides how often do i get to use a grill around here? not often. but for warmer weather regions, yes by all means skewer em always!
spanish paprika - WF has em. as does amazon. most stores should have it.
I got tins of it from WF. it was like 4-5 bucks for a tin. We use it quite a bit so it was worth getting a sizeable square tin of each. has no fake color, no preservatives. it's the peppers smoked and crushed. they both say spanish paprika. the spicy one will say "caliente" on the tin. shoprite should have it.
diet support group: i will, i will, i promise. i've just had a hard time keeping up with all the SD threads (i follow/participate in several) and plus do everything else I do online (all the amazon gc sites, email, etc) and plus do real life.
have been good these last few days - even more cognizant than usual as far as what I eat, since coming back from the doc a week ago. and i've dramatically reduced portions, drinking lots more water, and using that to quell hunger some, so I can eat smaller portions and fewer meals. but I was bad today. drank 2 beers cos there was no space in the fridge and I needed room to fit a package of romaine. not that's not an excuse, but you have to admit it's a pretty good one. haha!
recipes:
Zucchini/Summer Squash with Thyme, Balsamic and Feta
2 Zucchini, 2 Summer Squash, cut lengthwise into 4-6 pieces with seed parts removed
1.5 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
2 Tbsps Dried Thmye
Put the zucchini and squash in a glass baking dish. add the remaining ingredients. toss to coat well. cook in a 400 degree oven for 30-40 mins.
Remove from oven and crumble feta all over it. Serve hot.

but then I amended it as above, using dried thyme instead of fresh cos I didn't have any fresh thyme. I also used regular balsamic instead of white balsamic - didn't have any of the latter, plus I like the flavor of the former better. Used regular zucchini/summer squash instead of baby ones. Used half a block of regular feta (organic valley - 2.99 at MB) and just crumbled it by hand, instead of using crumbled feta. Didn't add any salt or any pepper.
Lemon Sole

I didn't add any salt. simply did the lemon juice, evoo and black pepper mixture. tossed a pound of thin dover sole fillets (they're 5.99/lb at WF this week in case you happen by there. One pound is enough to feed 4, it's lots of fillets) in that mixture. laid it out in a glass baking dish and topped with chopped parsley, then cooked it in the 400 degree oven that was still at that temperature when I took out the zucchini. gave it about 5 mins at that temp, about 2 mins on broil to crips the parsley.
sliced lemons onto the fish in the baking dish so some juice dripped on while I was slicing. and then just served it with the lemon slices decorated on the fish.
Chickpeas and Vegetables with Buttermilk Dressing
I soaked the chickpeas overnight to cook em the next day. But the kitchen was warm and they turned smelly. So, I improvised in a hurry with a new batch of dry chickpeas and discovered the Quick Soaking method works just the same, with far less time.
To quick soak: In a large pot heat 3-4 cups of water for every 1 cup of garbanzo beans you want to make. Don't add the beans yet. First heat the water to boiling. Add the garbanzo beans and bring to a boil, then boil for 2 minutes. Turn off the heat and let the beans sit in the hot water for one hour.
To cook: drain the soaking water, add fresh water in the same proportions, and cook for about 45-60 mins till beans are fork tender.
If you've soaked the beans overnight, all you need to is put em in a pot with water in that same proportion (3-4 cups of water per 1 cup of dry beans) and cook for 45-60 mins.
Now the main recipe:
1.5 cups dry chickpeas (aka Garbanzo Beans)
1 medium cucumber, diced
1/2 cup julienned radishes
1/2 cup diced green bell pepper
1/2/ cup diced red onion
1 tomato, seeded, diced
1/2 cup mayo
13 cup low fat buttermilk
1/4 cup chopped basil
2 tablespoons red wine vinegar
1 teaspoon minced garlic (i used 2 cubes of the frozen garlic paste we were talking about last week)
Cook the chickpeas as above. drain and cool completely.
In a large bowl combine the chickpeas with all the vegetables. Set aside.
In a smaller bowl, whisk together the mayo, buttermilk, red wine vinegar and garlic. mix in the chopped basil. add salt and pepper to taste (i added neither. the mayo and buttermilk added enough saltiness for us).
Pour the dressing over the chickpeas and mix well. Serve immediately or chill and serve later. The older the buttermilk (if you opened a container for something else for example and it's been sitting in the fridge, the tarter it will be. But it will also be thicker. So keep that in mind when preparing this dressing. Tasting is your friend. I made a big bowl full - it's great to serve for holiday gatherings: chilled, crispy and creamy.
Also, I used Spectrum Organic Mayonnaise. It tastes like homemade mayo, just to give you a sense of the flavor balance. You can use whatever kind you like, just try to get one that doesn't have a super strong eggy/mustardy flavor cos that could change the taste.
Note: I added a little more red wine vinegar cos I wanted some tartness. So taste and see.

not supposed to tempt you to drink a hefty cup of coffee with caffeine! but if you're going to, have one for me too - i can't drink caffeinated stuff anymore, darn migraines decided to be sensitive to it. once upon a time I used to guzzle all things caffeinated like they it was air. no more.

organics: that totally blows.
no WF near you either? they have some great produce prices on organics cos they sell in such great quantities. for example huge bunches of fresh organic herbs are 1.49-1.99 there, in contrast to the little plastic boxes that you find at grocery stores for 3-4 bucks. organic cukes are just 15-20 c more than regular. organic bananas are 99c a pound. everything is a nominal difference, so that across 10-15 things you'd end up paying maybe 5-7 bucks more or so each trip. we just cut back on eating out etc, cos that investment is totally worth it in terms of our health.
another thought: do you have any co-op stores near you? they all have organic produce and you may find decent prices. what about CSA's? are there any you can join if you are interested in getting organic produce at a decent price?

kay- have a safe flight! so wonderful you have amazing connections for teas and spices. quality of tea i brought back from india was very impressive, even tea i bought at the airport in mumbai which wasn't any more expensive than in the indian supermarket. so much better than supermarket tea here. right now i'm drinking jasmine green tea by good earth. somebody recommended this brand in the shoprite thread and there was a good deal so i bought it. however i do not smell any jasmine! stay cool!

regarding the underwear, they were inside packages so not like i could try them on. in asia, small, medium and large are not the same small, medium, and large here. had to take calculated gamble. last time i was in asia i bought a large polo shirt that just fit. i was a giant, *healthy* person compared to the rest of the female population back then. although at the time i was used to buying gap unisex clothing so everything was big at the time. the fashion here was oversized and drop shoulders at the time.
it's amazing how much time sd sucks up. i'm thinking of unsubscribing to a few threads cuz the deals and the entertainment are just not there. i'm just not seeing good deals in the walmart thread that i thought i would see w/ the new coupon policy. and omg, my email, i just cannot keep up or catch up!

dh just told me his baseball tix sold so now we are not going. so i'm now thinking of going to target today....and trying to resist buying more makeup at cvs. i still have a few coupons and they finally put 75% off stickers on the stuff so i know what's on clearance but that means it will go fast b/c everybody else now knows too. but i already got a concealer, foundation, powder, eyeliner, brow pencil and nail polish. wish they had more colors of the revlon nail polish and lipstain on clearance. but since i barely wear makeup, really just how much do i need?
eta- i was looking for a baked zucchini recipe and this one sounds perfect. it's also bff's favorite veggie so it sounds like a good recipe for if/when we go to her beach condo this summer. thanks!
Made it through day 1 of my diet w/o ANY cheating and felt good this morning. Day 2 is harder for me since it's strictly veg and soup. Hard to eat breakfast of cauliflower broccoli and carrots (thanks to Birdseye) but I did it. Looking forward to my allowed baked potato& butter tonight :-)
