I'm making cream of potato soup for dinner tonight. A little garlic, a little onion, and some white pepper are added to the Yukon Gold potato cubes while they simmer in chicken broth. A splash of half-and-half and a little finely shredded cheddar cheese finish it off. My poor blender is wondering what the heck is going on in my kitchen, lately. I might need to take him outside to discover that Fall is finally here. bounce

Does it really matter what potatoes you use? Or could just any brown one work?

No, brown/Russett/Idaho potatoes have a sturdier starch that is very dry. Red potatoes have a thinner starch that is more pasty. Yukon Gold fall between these two, and have a very delicate flavor. They're delicious, honestly.
