a coworker was just talking about making chili last night using fresh tomatoes instead of canned tomatoes. she also mentioned fresh onions, peppers, and mushrooms.

i'm suddenly thinking i'll make a big pot of chili tonight laugh out loud

anyone ever made chili with fresh tomatoes? i'm not sure how that would work.

I've tried but the fresh tomato sauce is a different consistency. I've done a mixture of both fresh tomatoes with canned tomato sauce.

that's what i was thinking. it would be too watery using just tomatoes. maybe like 10 Roma tomatoes, and then canned tomato sauce?

Yep. I typically put them in the boiling water for a minute then the ice bath so you can peel them. Squeeze as many of the seeds out as you can. Pulse to desired consistency in the food processor. You might want to make most smoother and some chunkier- give the chile some depth etc.
you can do it without the peeling but it's way better, IMO

If you squeeze out lots of the water it's not bad- but you still might want to add some paste.
