So for dinner I put the jowls in a 2 gallon cast iron dutch oven, and let them cook by themselves for 5 hours. Then I took them out, let them cool, and threw in chinese cabage, mushrooms, onions, tomatoes I had canned last summer, carrots, kosher salt, rice and soy sauce. There was about 2 quarts of drippings from the jowls to simmer everything in. Then I cut up the jowls and threw them back in. It was delightful!
Poor Wee Man has been screaming all day. He hasn't thrown up yet, but this has been the time of day he's started doing it for the last few days.

Yes. We've been rubbing it on his feet. I know his head is killing him because he's dehydrated and won't drink anything. We can't give him milk because that mostly what he had yesterday, and that was really hard for him to get up last night on account of it being a giant curdled ball in his stomach. We tried Pedialite, but he doesn't like it. The only thing that has worked is using a children's medicinal syringe to spray water in his mouth. He like the novelty of it, but it isn't nearly enough to keep him hydrated. He's finally sleeping now, but I don't know how long that will last. The on call nurse at the hospital told us we are doing all we can, and that he's not in any immediate danger. I just still don't like seeing any of my kids this way.

Too much sodium in piggy?
The only sodium is what you add to the pig as far as I know. I just went and picked up my pig today (the jowls I cooked today were from the last one). 250lbs of food for $320. You really can't beat that for a pig that only eats organic foods. Hell, you can't get mass produced factory farmed pork chops for that price.
