Unless I'm eating steak, everything I cook is well well done. I typically tend to cook things on low heat for a very long period of time. I cooked the pig's head for 24 hours, and the ribs for 18 or so. As long as it gets over 180 everything is fine.

dang....just got an awesome rectangular recycled spanish 1/2" thick glass vase...it's cracked at corner Crying yes, i can take back, yet i wanna purchase the one remaining as well Frown

Dinner tonight was "just grits". The meal is so named because that was my spouse's initial response to me the first night we came home late and she wanted something to eat. I said I'd make a pot of grits. She responded indignantly, "Just grits?!?" It seems the only kind she'd ever eaten were instant grits, and wasn't the least bit prepared for old fashioned boiled grits cooked with fresh chopped garlic and cheddar cheese, studded with bits of pork breakfast sausage and crispy bacon. There's also a splash of half-and-half in the grits to make them extra creamy.

More like cream of wheat, or farina. Almost exactly like polenta, only much creamier.
