the recipe doesn't really call for any greens, but i'm really considering throwing in some spinach or kale.

1 onion, finely chopped

What about stew beef cubes instead of ground beef?

Kale and spinach are wonderful add-ins to any savory dish drool

if i was going to use stew beef, i'd want to cook it in a crock pot with some beef stock for about 4 hours on Low before adding it to the stew. i'd want it to be falling apart so it's not tough and it shreds easily. but i don't have that long, so this time i'll use ground beef and if the flavors are really good...it's stew beef next time! drool
