Oddly I'm not much a fan of corned beef unless it's in hash form. On paper it sounds like I'd like it.

I was sent a recipe the other day for some cheese balls that look similar (in appearance, not content) to that. It was something to the effect of you get some string mozzarella (sticks), and cut it up, dunk it in skim milk, then coat them in italian bread crumbs. Bake in the oven. Seemed like a good idea.
