I went to the store over lunch to look at the TV I wanted. I couldn't get myself to buy it. It's just not enough of an improvement over my current 8 year old TV to justify the $900. I guess I'll just have to wait for OLED. That will be a justifiable improvement.

But by then I may be living in a van down by the river anyway.

Mac'n'cheese is best made with a roux/bechamel/cheese sauce including at least one whole egg blended in. I typically boil about a 1/2 pound of elbow macaroni, prepare a roux using three tablespoons butter and three to four tablespoons flour, thin/sauce it using a cup or two of milk, then blend in about a half pound of shredded cheddar cheese. Butter/oil a casserole dish, and put a thin layer of cooked macaroni on the bottom. Cover it with shredded cheese, and do this until the pan is full. Pour the cheese sauce over the whole thing and bake it at 350 until the top is nicely browned, about 30 to 45 minutes.


Hrmmm, Alton Brown's recipe [foodnetwork.com] is very similar to what I just wrote. The way to mix the egg in is to scramble it first, then mix it in with the milk before adding it to the prepared roux. The egg helps firm up the casserole very nicely.

Neither did I until I realized there was something missing in the texture of my finished product. The local Greek restaurants always use an egg or two so I said let's try it and it made all the difference.
