Does anyone now the actual dimensions of the bottom of these pans? I note they come in a variety of sizes, but I am assuming that is measured across the top. I have an induction range and the largest burner measure 11". Trying to find out what size I should get/largest size I can use. Thanks!

Do these have a flat bottom? Most paella pans have a curved bottom
I believe these are not the flat bottomed models. last time i checked for a large, truly flat paella pan (they'll usually be labeled as induction stove compatible), they were only available through importers.
If you season it properly it is nearly as good as the best non stick pans. But if you don't. It is a mess. Watch you tube videos on seasoning carbon steel pans.

All the pictures show flat bottoms, I see no curve, your rice will just burn
