Apple Music open and playing, 5-8 tabs open doing school work, iMessage open, run SurfShark VPN, and compile code here and there in my terminal for school projects. I upgraded from a 2018 MacBook with a dual core i5. I think it's very speedy and it never heats up with the workload I mentioned.

Amen. 2.5 years into an m1 air with 8gb ram and still runs amazingly. No lag, no slowness. And I'm a software developer.
It's entirely dependent upon what you do. If you do normal everyday tasks web browsing office work running probably no more than 10 Chrome tabs You're going to be fine. If you're doing heavy editing if you're doing a lot of Photoshop work if you run a lot of multiple programs or multiple Chrome tabs definitely jump to 16 GB
Unfortunately, with the new architecture for the processors utilizing unified memory meaning the memory is actually part of the chip fabrication itself. We won't be seeing user upgradable memory for some time if ever. They were rumoured to be working on that for the Mac pro but as we know that never happened.
Agreed

Even M1 is a huge upgrade over the old Intel. Congrats! And thanks for the real world run down. Folks here will appreciate that!
