Blackened Chicken
Ingredients:
8 Boneless Skinless Chicken Breast Halves
2 Tablespoons Salt
1 1/2 Tablespoons Garlic powder
1 1/2 Tablespoons Ground black pepper
1 Tablespoon White Pepper
1 Tablespoon Onion Powder
1 Tablespoon Ground Cumin
1/2 Tablespoon Cayenne Pepper
1/2 Tablespoon Paprika
3/4 Pound Unsalted Butter - Melted
Preparation Method:
1 Pound chicken breasts to about 1/3" thick. Thoroughly combine the seasoning mix ingredients in a small bowl. Just before cooking each piece of chicken, dip it in the melted butter so that both sides are well coated, then sprinkle each fillet evenly with the seasoning mix, using about a rounded 1/2 teaspoon on each, and patting it in with your hands. (If you lay the fillet on a plate or other surface to season it, be sure the surface is warm so the butter won't congeal and stick to the surface instead of to the meat. Immediately place the fillet skinned side down in a hot skillet, making sure all meat folds are opened up and the meat is lying flat. Pour about 1 teaspoon butter on the top of the fillet (be careful, as the butter may flame up). If you cook more that 1 fillet at a time, place each fillet in the skillet before buttering and seasoning another one.
2 Cook uncovered over the same high heat until the underside forms a crust, about 2 minutes. (The time will vary according to the thickness of the fillets and the heat of the skillet or fire; watch the meat and you'll see a white line coming up the side as it cooks.) Turn the fillets over and pour about 1 teaspoon more melted butter on top of each. Cook just until meat is cooked through, about 2 minutes more.
3 Serve the chicken fillets crustier side up while piping hot. Clean the skillet after cooking each batch and repeat the blackening procedure with the remaining chicken fillets.

Thai Beef with Chiles and Basil Over Coconut Rice
* 1 1/4 cups jasmine rice
* 1 can (13.5 ounces) coconut milk
* Coarse salt
* 2 tablespoons plus 1 teaspoon fish sauce
* 2 tablespoons plus 1 teaspoon soy sauce
* 1 teaspoon sugar
* 1 tablespoon vegetable oil
* 3 garlic cloves, chopped
* 3 long hot peppers or red jalapeno chiles, seeded and sliced into 2-inch matchsticks
* 1 1/4 pounds ground beef sirloin
* 1 cup loosely packed torn fresh basil leaves
* Lime wedges, for serving
# In a medium saucepan, combine rice, coconut milk, 3/4 cup water, and 1/2 teaspoon salt. Cover and bring to a boil; reduce to a simmer, cover, and cook until rice is tender and liquid has been absorbed, about 25 minutes.

one onion diced
1 or two leeks sliced

sweat the onion and leeks in butter until soft/clear. I then add chicken broth/stock and continue cooking until the onion flavor is infused then I use a slotted spoon and discard the onion and leeks. To the broth I add peeled and quarted potatoes and cook until they are falling apart. Once the potatoes are cooked down the soup should be thick. I then add heavy cream until it's at the consistency I like and cheddar cheese. heat it until the cheese is melted and top it with homemade croutons or serve it with crusty bread.
We also like potato soup made with ham or bacon, but the cheesy potato is our favorite.

Deeply Roasted Cauliflower
Serves 4
Preheat oven to 425. Cut one head cauliflower into 1 inch pieces. Drizzle 1 Tbs olive oil over a foil lined baking sheet. Arrange cauliflower in a single layer and roast for 10 minutes. Remove pan from the oven and shake to redistribute cauliflower. Roast for 5 minutes more. Sprinkle with salt and drizzle with balsamic vinegar.

1 2lb bag frozen corn
half stick butter
4 oz cream cheese
7 slices american cheese
salt and pepper to taste
Mix it up in your crockpot. Cook on high 2 hours, then on low 2 hours. YUMMY!
Stuffed portabella mushrooms (for 2)
2 portabella mushrooms
2 italian sausages (casings removed)
1 small yellow onion (diced)
1 tsp olive oil
2 large handfuls of fresh spinach
2 pieces of leftover cornbread (crumbled)
1 egg
1 tsp garlic powder
kosher salt & fresh ground tellicherry pepper
fresh goat cheese crumbles
Preheat oven to 400.
Take your portabella mushrooms and cut off the stem, then with a small spoon, scoop out the gills. In a medium skillet add the italian sausage and begin to brown over medium heat. Dice the yellow onion, add 1 tsp of olive oil to the opposite side of the skillet and add the onion. Salt & pepper the onion. As the sausage begins to brown, crumble it with a wooden spoon, then mix with the onion until the sausage is completely cooked. Add the spinach to the pan and wilt.
In a large mixing bowl take your leftover cornbread (or any breadcrumb will do really) and crumble it into the bowl. Add the contents of the skillet and stir well. Let this cool slightly as to not cook the egg. Add garlic powder and some salt & pepper if needed to taste. Add the egg and mix well. Lightly brush the portabellas with olive oil and place them on a cookie sheet/pan. Split the sausage mix evenly between the caps. Sprinkle the top with the goat cheese and lightly press down to ensure they don't move. Place in the oven for 15-20 minutes or until the cheese just starts to brown and the contents are bubbly. The mushrooms may split slightly during cooking. Remove from the oven, take off with a spatula and serve.

I referenced 3 or 4 recipes online but didn't follow any of them. So I'm particularly proud of myself.

What you're looking at is a corn tortilla on the bottom, with a black bean puree spread on it. That is topped with oven fried mahi mahi bites, shredded savoy cabbage, chopped Roma tomatoes, and sour cream.
I took fresh mahi mahi fillets (no skins), cut them into chunks, and dipped them in egg, then seasoned flour (cayenne, paprika, garlic salt, pepper, cumin), then back in egg, then in panko bread crumbs. I laid them out on a cookie sheet and baked them for 25mins at 375 degrees.
For the black bean puree (just think refried beans, made fresh), I had 2 cans of black beans, rinsed and drained. I put them in the food processer and added 1/4 cup of finely chopped onion, 1 finely chopped jalapeno pepper, and fresh lime juice (roughly half a lime). I blended a little, added a drizzle or two of olive oil, and continued to blend until they were the consistency of refried beans.

I've made it two ways, once with veal and no mushrooms (for my husband) and once with chicken and mushrooms (for both of us):
I should add the caveat that I don't really measure, but I'll give it a shot, so if anyone wants to try to replicate...
Veal chops (or chicken filets) - I used 4 chicken filets and had 1 leftover. They were very small. I can't remember how many veal chops I used. He ate them all, but he probably overate and may have saved some for lunch the following day.
1 T chopped garlic
1/4 of a medium onion, coarsely chopped
1tsp. Tarragon
1C White Wine
Olive oil for browning and sauteeing
Brown the meat well on Med-High heat, in olive oil on both sides and remove from pan. (I find it works best in a heavy pan, like a cast iron skillet, but use whatever.)
Sautee onions until clear.
Reduce heat to Med, or Med-Low.
**Add garlic, wine, mushrooms, Tarragon, and cooked meat. Simmer for 20 mins if veal. 10-15 mins if chicken.
I make a pot of cous-cous and steam some broccoli, and serve this is a wide, shallow bowl. The liquid from the entree permeates the cous-cous and it's delicious.
**If using veal, you may wish to add 1/2 C of beef broth when you add the wine, if you want to use the liquid over any side dishes like cous-cous, or mashed potatoes.
Mahi
Heat 2 tbsp of oil in a medium skillet on medium high heat.
Pat dry Mahi filet and lightly flour on each side. Melt 1 tbsp of butter and brush on each side. Season lightly with garlic powder, onion powder, salt & pepper and then place in the hot skillet. Cook 5 minutes each side.
Farro
Cook 3 parts water to 1 part farro with a pinch of kosher salt for 15 minutes. It should have a creamy almost riosto like texture when complete. 1 cup of farro with 3 cups water will serve 4 generous portions.

i used this recipe [foodnetwork.com] with a few modifications.
i used all 93/7 ground beef, and i subbed brown rice for white rice, and i used a can of Rotel in addition to the tomato sauce to give it more kick. also, i doubled the meat (DH is a big meat eater) so i ended up with lots of the stuffing leftover - it is my lunch today.
i did put chopped green peppers in the stuffing, and DH said that was a wee bit overkill, given the fact that the stuffing was actually served in a giant green pepper
