In other news, I hate networking gremlins. Last night, one of my IP cameras downstairs was offline, and this morning, it was joined by the wireless access point downstairs. I reset the camera last night, and it was still offline. I reset the wireless this morning, and it was still offline. Finally, I had to go upstairs and reset the main router and both network switches, after which everything is working correctly again.
Rib rub/seasonings: (for 8 pounds of ribs)
6 tsp dark brown sugar
4 tsp salt
4 tsp smoked paprika
2 tsp red cayenne pepper
2 tsp white pepper
2 tsp ground cumin
2 tsp dry mustard
2 tsp onion powder
2 tsp garlic powder
Mix well and spread / rub over the ribs.
Wrap/cover with plastic wrap and marinade in the fridge for a few days.
The plan is to smoke them for about 1.5 to 2 hours, then finish them in the oven at 350 for another few hours.
Finally, they're going to get a sweet glaze:
Apple juice
Apple cider vinegar
Apricot jam
Coarse ground mustard
