So if you plug is in, I assume some sort of heating and evaporation takes place. Doesn't that put the water/humidity right back into the air?

These are made for small spaces, like safes. They use a gel/plastic material that absorbs moisture then releases it when plugged in. Obviously, you wouldn't plug it in while inside the small space you are trying to keep dry.
