Yaxell Gou knives are made of SG2 steel. The quality is fantastic on both build and durability. SG2 steel is a powdered steel with fine grain carbides meaning it sharpens reasonably well, takes a good edge, holds an edge, and chips less easily than VG10. It's a superior steel in pretty much every regards. Rockwell hardness 63. This is a HARD steel.
I prefer my Gou's over my neighbors Shun Premier's, Dalstrongs Shoguns/Gladiators ( have a few), and Wusthof Culinar's (I have a lot).
The reason these are being clearanced is they are making an updated version that does away with the laser engraved Kanji in favor of hand engraved. Supplies are limited FYI. These prices are overall fantastic!

Yaxell is one of the best mfgrs of professional knives. The Gou is well known to professional cooks and gourmet home cooks.
The reson these are going on such a good sale is because Cutlery and More has commissioned them to make their house brands ENSO which is almost a twin to the Gou and they don't want them in direct competition.
You can check high end retailers and see that the Gou is not discontinued, just discontinued to this retailer.
Dalstrong is a mediocre communist Chinese knife, but they have a GREAT idiot proof warranty so they are NOT a bad deal for a home cook. they're about as useful to a working cook or to a gourmet cook as a bicycle is to a fish. But I DO recommend them to people who are not skilled. Also dalstrong is only AUS10 and these are SG2. Much less dalstrong are made my untrained workers whose goal is production numbers. They'll be fored if they don't meet their production goals and replaced by another untrained worker. They care about numbers ONLY, not quality.
Yaxell are made by happy highly trained and skilled that are cared for like family.
This knife is about the equivalent of a Shun Hiro or a Shun Fuji
There is NO comparison between these and a Shun classic
You guys should chek out the Tojiro ITK bread knife or a Mercer Genesis Bread knife, even a wisthof Pro bread knife

The Enso SG2 line is also the competition for these, not the Enso HD FYI. The blades of this, the super gou, and the Enso SG2 are nearly identical with a different amount of damascus (no functionality increase) and hand engraved Kanji. Enso HD are VG-10.
