Plex NAS Compatibility List [google.com]

The 718+ has same processor as 918+ (x64 (Celeron J3455) 1.5-2.3 Ghz). The DS418 has a aarch64 (Realtek 1296) 1.4Ghz.

718+ if you want trans-coding capability for Plex server. DS418 if you want solid 4 bay NAS.

They are really very different models.

The naming convention works like this;
XX###+
XX - Series (Disk Station = DS)
1st # - Maximum drives (they make expansion units to add 5 drives)
2/3rd # - Year

So the DS718+ is a 7 bay Disk Station released in 2018. Note, it has 2 slots and can be expanded to 7 with an accessory which is not included. The (+) indicates it has additional processor power for 4k transcoding or something else.

The DS418 is a 4 bay Disk Station released in 2018. It has 4 built in slots, but cannot be expanded beyond that. It also has a slower processor and would not be good for processor intensive things (like 4k transcoding).
I have an older 214+ and like it for a lot of things, but it's not ideal at all for Plex. I haven't pulled the trigger on a better one yet.

I don't really need a Plus series if all I'm interested in is a 4K multimedia server, right? This will be my first foray into NAS.

What are you interested in? I got a J model on prime day, and while it was ok I wished I had something speedier, so upgraded to plus two weeks ago and it's way more useful.

Edit: I'm thinking this is not expandable, the "+" has more ram, higher CPU, can be overclocked.
Edit 2: B&H stated the the + has an extra 1 year warranty.

Really only for the purpose of running a Plex server for 4K content, and maybe a little bit of file sharing as well. I currently have a Plex server running on my Linux desktop connected to multiple external USB drives. I use my TV's (B7A) Plex app to play the content--movies, TV shows, etc. For the most part, that works alright but it's not uncommon to experience some lag from time to time, especially with very high bitrate content. Also, for the life of me, I can't play 4K HDR content with subtitles on. So I'm hoping to make the Synalogy my multimedia hub and put all those annoyances behind me, and in the process clean up my desk a little too.

Thanks for the link. Very helpful, but it looks like none of them is particularly any good for Plex transcoding, software or hardware.

I've read a lot of comments (here and elsewhere) about paying a little more to get the Plus and/or Play because of streaming.
I have no desire to stream media with a NAS - primarily looking to use it as DAS, with some occasional remote access or file sharing at home.
In that use case, is there an advantage to spending more?
