Wow, I have exactly the opposite opinion. I too used XBMC up through Kodi about a year ago. I switched to plex. It is so much easier to use and maintain. I love being able to stream anywhere, share with my family and friends etc.
Regarding metadata. I didn't have such issues, in fact, if folders are named reasonably well, I found plex scraped metadata better than Kodi.
Regarding transcoding. Plex doesn't do any transcoding on my LAN unless I am using a device that doesn't support the native formats. i.e. it's generally streaming original untranscoded streams. That said I keep my library organized and formats consistent so YMMV obviously.
ploping things into a library was actually one of the reasons I stayed on KODI for so long. I felt like it needed to navigate to different folders for different content but now that I have everything "plopped" into one folder it feels very natural. Movies and TV Shows, in fact they are still spread out into different folders and I have plex set up to pull the sources into the single library.
I think one of the main things I hated about Kodi and loved about Plex was the native tracking of database state. i.e. it knows what I watched and where I left off. Kodi only did this on a local player level so when I moved to bedroom from living room it had a different database of what had been watched. I knew I could move the database to a common SQL backend but it wasn't worth the work for me. (maybe this is something that has been improved since I abandoned Kodi a few years ago).
I also really like using the fire stick 4k and ROKU instead of a streaming box. More seamless and easier for the family to access and use the plex player on the TV, firetv roku, laptop, phone, on trips etc, vs teaching them how to deal with Kodi.
Again, just my experience. I am not trying to start a "this is better than that" argument. I certainly respect and understand the want to use Kodi as I used to LOVE it.

I use a plex server to store all of my media and I watch it from a Roku TV, the plex app on my PS4, my phone's plex app or a laptop/computer if im somewhere else.
