I just purchased a Samsung curved 32" at 1080p from Costco for $199. It's the Samsung Cf397 and same. Pixel density is a bit low for text. There is a Samsung 32" curved 4K for $379 at Costco but I didn't notice a huge difference in terms of display text.

If 1080p and 4K are looking rough pixel wise. What are we supposed to be looking for spec wise to steer clear of this issue?

Full HD LOL- talk about marketing misdirection. Unless you're watching only movies on this, 1080p resolution on anything above a 21" monitor is useless! 2560x1440 is the absolute minimum if you want to do any kind of browsing or work. PC Gaming might be ok- maybe...
Do people like the curved screens? They just don't look as good to me. But I could be totally wrong as I've only seen them on display.
I too prefer curved for work. 31-32" is a lot more real estate up close, and if you wear glasses, especially progressive lenses, the curve helps to reduce head movement to align with sight line.
A very adjustable mount helps a lot too. And higher resolution of you work more with text. Honestly, I'd spend more on good monitors and mounts vs more CPU almost any day.

Maybe they had the display scale set to 150-200% on the 4k version so they looked the same? If both are at 100%, then you will get 4 times the screen space of 1080p at the cost of small text. I have a 27" and 32" 4k and 32" is the bare minimum size for me to comfortably see 4k. The 27" makes everything so tiny making it impossible to read. These are my recommendations, but it also depends on your eyesight:
