Quarantine Food

Thought we could share what we're eating and exchange ideas. This was my menu for the week:

Peanut butter & jelly sandwiches with chips or fruit
Chicken tarragon, red potatoes, green beans
Garlic lemon shrimp pasta with broccoli, bread
Soup, bread
Eggs, pancakes
Black olive, mushroom, onion homemade pizza, salad
Turkey sandwich, chips
Soft tacos, tater tots
Spaghetti, green beans, garlic bread
Key lime pie, yogurt with fresh fruit, or pumpkin bread

I try to keep basic ingredients around and choose meals to make from a specific list each week.

Well what you do sounds delicious! I gotta work with what I have though, and I'm obviously doing something wrong, lol. Now there USED to be a frozen dough I'd buy and it was 4 loaves to a package. That stuff I could just take a loaf thingy out, thaw, knead, let it acclimate to the room temp for a little bit so it was more pliable, then roll it out into two separate good size pizza's and plop that directly onto a hot grill. THAT worked great but haven't found those loaves in a long time. Additionally it's only "just" beginning to be warm out where I live so that grilling might become an option again soon. You might consider donating to the fire stations. Those guys cook when they're on shift and would appreciate it. You might also find out if the hospital staff would enjoy a homecooked casserole. I'm sure they aren't getting much good food.

We keep lots of beans and rice on hand for hurricane season. We didn't haver power for 6 weeks after Rita and we cooked on a campstove or a fire. I started mixing 2 or 3 kinds together if I didn't feel like making soup (which is really good, BTW), definitely something I still do.

Three bean or Mediterranean soup would work great. The later one just has rotini noodles added. You could have vegetarian soup and using the same base have a version with chicken in it. The benefit to reading the recipe comments is the modifications others make. It helps you work with the ingredients you have and can easily get.
THANK YOU for this - so good. Made it over the weekend and snuck in quinoa - just because we had it. Topped with sour cream and some corn chips. It was easy and delish, Def gonna make it again.

I think some stores have started to institute a policy on that, the Trader Joe's near me only lets you buy two of any item at most.

Try a Champ recipe for the potatoes. Champ elevates potatoes to a whole new level. You add real butter, (not margarine) cream and green onions to a pan and cook them until the green onions are soft then add the mixture to some mashed potatoes and make a well in the top and put more butter for dipping, in case someone want more butter on their Champ. You can also add in some chopped ham but be sure it's not too salty.

I'm probably one of the few here that will eat lima beans, so I have a freezer full of them. When I went to the grocery store last week, they were picked pretty clean of frozen vegetables, but had plenty of lima beans. laugh out loud

Same here - the ralphs near us limits dairy, meat and cleaning supplies - one of each per household!

Very cool. Sounds delish and will try it out this week. Def real butter - we have a ton I've got hidden away in the back of the freezer ...

Ha - lima beans and cherry preserves. Why don't people like cherry preserves? And how do u cook the beans? Any tips?

I normally am lazy and just steam them on the stove. Set it and forget it while I'm making something to go with them.

For today and probably the next couple of days while I am night shift: Red Onions, baby bella mushrooms, and diced jalapeno peppers sauteed in coconut oil and seasoned with Slap Ya Mama Cajun seasoning. Then cooked about a pound of chicken livers in Kerrygold butter. Mixed everything together and simmered until everything was nicely carmelized. Also broke up four or five strips of bacon left from breakfast yesterday and threw that in.

I also had more rutabagas than I realized and I wasn't sure how much longer they were going to last, so I boiled and mashed those and now I have about 3.5 pounds of mashed rutabaga which I will probably be eating for about a week.

I will be off Friday, Saturday, and Sunday and I am thinking about making another huge pot of soup and then pressure canning most of that. I'm not sure if I have enough empty jars left though so I have to check that out first.
