Thought we could share what we're eating and exchange ideas. This was my menu for the week:
Peanut butter & jelly sandwiches with chips or fruit
Chicken tarragon, red potatoes, green beans
Garlic lemon shrimp pasta with broccoli, bread
Soup, bread
Eggs, pancakes
Black olive, mushroom, onion homemade pizza, salad
Turkey sandwich, chips
Soft tacos, tater tots
Spaghetti, green beans, garlic bread
Key lime pie, yogurt with fresh fruit, or pumpkin bread
I try to keep basic ingredients around and choose meals to make from a specific list each week.

with Amy's Organic , and lean cuisine frozen food. Stocked up Good Thins, Baked Lays, low sodium canned food.
1- any canned tomatoes/paste + canned olives + proteins (fish or chix) =Mediterranean dinner
2 - any jar tomato sauce/any paste + any toppings or veggies + sprinkle of cheese from freezer = pizza
3 - any canned tomatoes/paste + chopped onion + any beans or any protein + cumin / chili powder (or taco mix) = easy chili (add any chopped veggies you want/have: carrots, zucchini, canned beans)
4 - any canned tomatoes/paste + pasta + any frozen veggies like broccoli - healthy light meal
It's really salty, but makes a great topper when you cube it up and sautee it to a crisp.

Made spam fried rice the other day and it was delicious. Unfortunately I didn't stock up on spam.
Speaking of cherry preserves... Amazon was even out of frozen fruit and frozen pie.

Pork, chicken, or turkey (leftover chicken or turkey works great)
One gallon can of pinto beans, save the juice!
1-2 onions
Garlic
2-3 4oz cans Ortega (or store brand) mild diced or whole green chiles
Chicken bullion to taste
Salt and pepper to taste
If meat is not cooked already, chop into bite sized pieces and sauté till thoroughly cooked.
Chop onions into 1/2 inch pieces. Chop garlic finely or use garlic paste. Sauté both till onions are translucent.
Pour whole contents of beans, juice and all, into large pot or crock pot. Add meat, garlic, onions, as well as 2-3 Bouillon cubes dissolved in hot water. Cook for an hour or two, letting it simmer till all the flavors mingle. Add water as necessary to keep the stew liquid enough to cook easily. Add salt and pepper to taste, more bouillon to taste.
I'm kind of instinctive, I'll throw things together till they taste good. This is a pretty easy recipe, and works pretty well to use up leftover turkey or chicken. Freezes well, too.

I also had more rutabagas than I realized and I wasn't sure how much longer they were going to last, so I boiled and mashed those and now I have about 3.5 pounds of mashed rutabaga which I will probably be eating for about a week.
I will be off Friday, Saturday, and Sunday and I am thinking about making another huge pot of soup and then pressure canning most of that. I'm not sure if I have enough empty jars left though so I have to check that out first.
We did a click list order to Kroger (order through the app and they bring it to your car) and at Sam's, we parked and an employee came to the car (masked and gloved), copied our list (she couldn't touch it) then went in, filled or order and brought it back to the car and loaded it.
When we got home, we followed these recommendations on cleaning the products.

Your going to need a vacation when this COVID-19 is over.
Store bought refrigerated pie crust.I didn't use the canned stuff. I used frozen corn, peas,and carrots, and diced a few potatoes.Comes out pretty tasty. I used this recipe....
