I agree 110% I have adopted her restaurant style one and now we go through a batch a week! Everyone of my family and friends now puts in requests for it. My ninja blender has a permanent spot on the counter we use it so much making salsa.

Our WM, Target, Publix, and Aldi (store brand) have all been out of hot or mild, save for the jumbo cans.
Note: This absolutely isnt traditional Spanish Rice, period. Its Elfish Rice, if anything~
Since March or so I've been using this stuff to make spanish rice, a can of this, maybe 1/3 cup DG cheap salsa to supplement that, 1.5 cups rice, 2 and 3/4 cups chicken or beef stock, and some spices (dash of cumin, 1 teaspoon oregano, pinch of black pepper, small pinch of chili powder if you want to bump flavor a little more)...
..just make sure everything has come to a good boil before putting lid on, let it simmer on low for 20-21 minutes, then sit off the burner on a different part of the stove for 10 additional minutes. do NOT use 3 cups stock, undercut it by that 1/4 cup and MAKE SURE its boiling all over the pan, not just one one side (learn from my mistakes lol).
serve with fajitas, or tacos or just warm by itself w/ some shredded cheese on top, black olives n sour cream optional.
this has been my very cheap, hearty go-to for months and while im burnt out making it over and over, it works like a champ and there is enough for leftovers for a day or two, depending.
YouTube has many good videos about making this dish, showing folks toasting the rice at the start too (I do that as well, just didnt feel like typing that out cuz im lazy)....DO study this recipe there before cranking it out, and mind what I said about those amounts for liquids and cook/rest times, it can result in a failure if you are not precise about it. The Rotel + Salsa add additional liquid over and above what the stock adds, and rice is super picky about amounts!
