In for 2, the blends are mostly oak and alder "fillers" but still good enough for everyday smokes. Because of the fillers, they all have an overall "commercial" type flavor, reminds of the corner bbq shack (in a good way). Pellets are nice and dry and light up well (compared to other brands).

Keeping it real simple:

Hickory or pecan for beef or pork
Cherry or apple for everything else

If you want that commercial bbq shack type flavor, then go for any of the blends (basically all 80% oak or alder), which would be pretty mild and all-purpose.

Mesquite if you do a lot steaks, tri-tips etc.
