I literally just joined yesterday...any way I can retroactively get this deal?
If you go to Costco and tell them, more than likely they will. They're pretty cool about things like this. Very honest company.

So a membership for $30 then ($60 - $30)?

I know lots of Costco fans hate on other warehouse stores, but when we were maintaining both Sam's Club and Costco memberships last year we basically stopped going to Costco. Nothing beats the ability scan and pay with an app, skip the lines and have the door check people just scan a barcode on my phone!
Yep, I've been spending more money at sam's just because of the app. Prices for the most part are the same.

Do I need to take print out of the activation certificate before going to Costco? Or can I just show my email @ Costco ?

So I signed up for a UPS account and went through the motions to see if this was still valid. Then I hit the page where it wants me to provide them with my credit card info, even though they clearly state that I need to sign up for membership at an actual Costco store. That's when I finally read all of the fine print (which the OP did include here also). So, you have to sign up for auto-renewal and you have to use a Visa card (via the UPS site), or else you won't get the $30 gift card (to be mailed later). What I'm wary about is: I get the impression (maybe wrong?) that the auto-renewal is handled by a 3rd party (UPS, or whoever they're partnering with) and not Costco. So if I later decide to cancel my Costco membership, I have a feeling that I'm going to *also* need to track down whoever this other entity is that will try to auto-renew me. If I'm wrong about this, let me know.

I may stop into my local Costco today to ask about the $60 promo that someone else mentioned to see if that (or any other promo) is still available.

For those that did this deal, were you able to get 1 additional card for a different member of your household?

Is there a way that I can get a general idea of what's in the Costco store without having to go there?
It's also easier for me to shop from the comfort of my home. For example, I really don't like doing product research from anywhere buy my home computer.

https://www.instacart.com/costco

but figure in a significant markup vs in store, its probably like +30%. also they don't have everything on their site

No pun intended, but you should buy what you need, not based on what they sell.
Sam's might be a better option for you, as their online and in store prices are same.

1) I want to assess the price differences.
2) Some things I might consider holding off on buying and buy at Costco in a couple of months.
