For example, if you met the minimum spend for the sign up bonus in the first month the card was opened, the statement closing date was probably October or November 2016. If you met the minimum spend in the 3rd month that the card was opened, then the bonus may have been awarded in January or even February - again, depends on the statement closing date. You can check your first few statements in that account to know for sure.

No you don't have to book flights then through site. Using the Chase site gives you a 1.25 boost in points (1.5 w/CSR).
While you access it thru Chase, it's run by Expedia (or one of the other travel sites).
When I book travel I open two browser windows and simply compare the "Chase site" to direct. Most of the time it's the same (be careful to compare apples to apples). Or within a couple dollar. Sometimes it is more, but sometimes less.
When booking thru the Chase site, you have a choice to use UR points or credit card
You don't even have to use the Chase site if you want to use UR points. Chase has a good list of partners that you can transfer UR points to them (Southwest Airlines for example). Usually it's 1:1 but review carefully.
Like you, I've found some cheap flights lightly. Like $60 RT NS to Philly. I booked on the Chase site because price was same and since I use a CSR I got a "bonus" as it gets a 1.5% boost in points at the site.
Not to get all nerdy, but most people value UR points at 1 cent per point. So if you get that, it's "ok". The fun becomes trying to get more than that per point. The Chase travel site gives 1.25 cents per point for CSP and 1.5 cents for CSR (assuming price is the same). There are ways depending on how much work, time and effort you want to put in to get more.
And besides the dollar value of a point, there are other considerations. For example, some people prefer to use points at hotels that give them free upgrades as the entire family enjoys that. Others get "value" in using points to book first or business class, something they would normally never do. Or book to a place they would normally never travel.
If I have a chase sapphire reserved with 100k points and I downgrade to another card and open a sapphire preferred can I transfer the original 100k points to the preferred card and combine the bonus points with previous points?
Wait, have you had the CSR long enough that you can get the bonus on the CSP? If that's the case, I believe your plan would work. While the Freedom cards are"cash back" cards they are really UR points. So assuming you don't spend the cash, one you reopen a CSP, you should be able to transfer.
Not sure who most people are, but most of the ones I know value them somewhere north of 1.5 cents a point, usually nearer 2 when there's not a pandemic going on....
Because the minimum value a traveler can get for them is 1.5 cents, and you can usually get more like 2-2.5 cents for hyatt hotels and coach fares, and 4-6 cents a point for business class fares.
(even DURING the pandemic you can get 1.5 cents via CSR PYB)

If you close/downgrade before transfer out you may lose them
