As someone mentioned above, the i3 config is a great value too.
Also in regards to the i3 model, I didn't even mention it in the post because the way I see it, unless you're really strapped for cash the jump up to the i5 model for less than $100 is a no doubt better option in-terms of performance/longevity.
Also ironically I just now placed my order, I was super hesitant to do so because I'm so hyped about ryezen these days, but when it comes down to it I don't think I'll see one of those (zen 2 or 3) come up at value quite this appealing for a little while yet.

Certainly nothing wrong with buying what fits your needs.
They might not need 2 more cores and 4 more threads (example), but when you explain to them that the lower spec system will become obsolete faster and actually cost more money in the same period of time they understand that.

Been live streaming from a Ryzen 3 Dell Inspiron laptop connected to a mirrorless Canon via Zoom while recording on OBS and the laptop just chokes.
I've been thinking about getting the Dell G5 but this i5 seems like a good deal and should perform well. I can add a decent GTX 1050 card and still come out around $600 all in.

That said, unless they have specific need for a desktop, I'd suggest most people get a laptop. Especially if they don't already have a monitor. There aren't many reasons to have a full sized desktop these days.

I know one can add a low power gpu to this. But I would 'ere on the side of caution for buying this as more than a productivity machine.
