I wanted to check if there's any other models that fall in this discount category, went back up a level to 'electric guitars' in the breadcrumb and even the fenders show $799 instead of the $519 and you can't seem to get the discount back unless you use the direct SD link.
Is there some sort of coupon code being applied ?

This is the only player model they can advertise a discount for because it is unique to their store (and therefore, no other dealer will be forced to price match).
You might be able to get discounts on the other colors by calling the sales team, but you typically won't see them advertised for less than MSRP unless the sale is coordinated by Fender.
Considering a Fender Player Stratocaster HSS Plus Limited Ed for $599 because I like the color better but wonder what the differences are between the HSS Plus and this Strat and if they matter to a beginner?

Bugera V5 Infinium 5W would be a nice pairing with this. $235 for a tube amp with reverb.
But, ask for a good amp recommendation and you will get a zillion suggestions.
I also think the Boss Katana would be a good pick. How loud can you be where you'll be playing?

The HSS Strat has a humbucker in the bridge which might be better for higher-gain sounds. You can get hum-cancellation with positions 2 and 4 on the 5-way switch of the SSS strat, though. Neither HSS nor SSS is strictly better for a beginner.
The 'Plus' designates a transparent finish over a maple veneer on the top of the instrument, it's purely aesthetic. Get it if you love that finish.

I recently bought this Fender, a PRS SE Custom 22, and Yamaha Revstar 720B. I agree that the PRS fit and finish is better than either the Fender or the Revstar. All three sound great and are quality instruments. The fretwork on the Fender and Revstar isn't terrible, just not perfect as on the PRS. It can easily be cleaned up.

Thats likely due to the environment at GC with the wood contracting/expanding with temperature swings.
You *probably* wont have that problem with one that has been stored not out in the open.
Ive always said - being on guitar forums for 15+yrs - NEVER judge a model of a guitar by what you run into at GC. Its the worst environment possible pretty much.
Has it been reported that the stores aren't profitable? I had heard that they are profitable. The bankruptcy is because of the debt they've been running since the 2008 financial crisis caused a years long decline in sales.

So I guess they weren't profitable before Feb 2019 but were doing better since.

I'm right there with you, but ordered this anyway. Figured it's a crapshoot if I get a good one or a bad one, and worst case I return it. I too noticed the $200 Squier felt better, as did the same Player-class Telecaster. That neck felt great, but the Player Strat felt like it was capable of drawing blood. To the comment above about it being due to the humidity and environment, while that might be the case, the guitars I saw with the rough frets were mostly on the top of the ends, not where the fret met the wood. My hope is that I can simply file down the burrs and rough edges that were left.

Strat arrived today - I'm very pleased. The neck and frets feel great compared to the disaster that I played at GC. This neck and frets feels very smooth, and the guitar seems flawless. Mind you, I'm an adult that is now (again) trying to learn guitar, so I really don't know what I'm doing. Take my feedback with a grain of salt.
There are some intonation issues and very little fret buzzing, so it seems some setup is likely in order. All that being said, I'm still torn between this and a PRS SE, but for no reason other than I'm upgrading from a cheap 25 year old Washburn Lyon (strat-style guitar from my teenage years that I never followed through with). While this Player is definitely better, it still feels very much like the guitar I already have, while the PRS would feel completely different and new. Being a new player, I don't necessary know enough to appreciate all of the good and the bad, which really makes shopping difficult.
(Edit) Also wanted to note how fast this was delivered. I placed my order on Thursday evening, selected the free shipping option (7-10 days) and it shipped Friday morning and arrived Saturday afternoon. Guitar was double boxed with no signs of any damage.
The "&=emailprice" in the URL is the special sauce that brings it fro 799 to 519. I checked several other guitars and a few cameras/lenses I was interested in, but didn't manage to land on any others with an active discount from this code. Not to say they're not out there, but Adorama has a big inventory.
No tax on the Ibanez $149.99 from Adorama and they did ship out faster than expected through UPS would be more relievable that using FedEx system when it comes to damages. Amazon has it's onw collections of guitars in stock the prices are pretty much fixed. They all have the same sale prices on guitars that might have came out in 2015, 2016, 2017, 2018, 2019.
Guitar amps did drop down from $69 to $59 over BF CM only. Nothing much with CW for only some items like using iRing to PC, or to iMac, iphone, ipad. Record save your music notes. Expensive but the fun in it to produce your own songs and music videos.
My plans are to purchase one more Electric Guitar from Ibanez either through Adorama via Amazon or Amazon itself for now. $199 to $249.
Adorma did a lot better shipping my Ibanez than Amazon did with the knock guitar was rolling around in both boxes. I guess no one really cared at Amazon hub to tape up the inner box so it was open and everything just rolling around in as it move through the sort belt at UPS hubs and in the van-line trucks.
Probably not, because there are a lot of expensive Les Pauls out there and 6K is a ton for a non-vintage guitar. If it is rare and becomes used by a popular artist, possibly, but it's likely to depreciate.
Guitars that I have noticed appreciate recently:
Peavey T60 (was $300-400 used a couple years ago, now ~$600 used)
Pretty much every CIJ/MIJ Jaguar or Jazzmaster that was $500 used a few years ago is now asking $750-1200
Squier Jazzmaster Baritone ($550 or less new, now ~$1000 used)
Wildwood Fender AVRI '65 Thin Skin Jazzmaster (was $1900 new, $2200 used)
(I think a lot of AVRI instruments are currently appreciating because the American Original series is less true to vintage spec.)
Fender J Mascis Jazzmaster (was $1000 used, now close to $2000 used)
Fender Elvis Costello Jazzmaster (was $2000 new, now close to $3000 used)
Any vintage Jazzmaster, pretty much, has been appreciating since the 90s.
I think 1950s and 1960s Strats, Teles, and Les Pauls continue to appreciate.
But a Johnny Marr Jaguar, which is a popular signature model with great reviews, is $1900 new but goes for $1k-1400 used. If it's discontinued, prices might creep up over time, but it's a mass production model so who knows.
The vast majority of guitars depreciate.
The vast majority of cheap / entry level guitars may depreciate or remain around the same price point, but that's not the case for most Les Pauls for example (using that since the guy you replied to specifically mentioned it). Take a look at what some of the custom Les Pauls were selling for ten years ago and compare to what they're going for used on eBay today. If you invest in a nice guitar, you will probably be able to turn a profit in a few years' time, especially if it's a custom / limited edition Fender, Gibson, even Epiphone.
