Why's is i5 version better?
i5 version has 6 cores, i7 has 8. Neither has Hyper Threading. Going from 6 to 8, for gaming, usually does not translate to big performance gains. The frequency will matter more. The i5 version also has the better GPU, although its only 1 model up.
If you need 8 cores and don't want to buy more storage the i7 might make more sense.
But for the person I have in mind for this PC to buy for, the i5 makes more sense. Especially when you tell them it's $140 cheaper for not a lot of actual gaming performance loss.

This article [gamersnexus.net] might help a bit, but really you should figure out what software you will be running and what type of workloads and check out CPU benchmarks that include them. Gamers Nexus is a good YouTube channel for this. There are many others as well.
Overall, i'd say don't do it. Your 1080ti is leaps and bounds ahead of the 1660ti. The least I would say, if you wanted to "upgrade", would be a RTX 2060. Even then i'd be a hard sell.
