I was going to purchase when I noticed Target is also selling old 12 month gold cards, for 59.99 I already have ultimate what will happen if I redeem one of the regular gold cards?

If you redeem a 12 month gold and you have gamepass it will be converted at a rate so you would get like 4 months of Gamepass ultimate.
If you have your subscription set to autopay, turn it off. When you plug in your code it will give you the option to turn autopay on and receive and extra month. Repeat this process for each code you have. 9 months becomes 12 months.
At some point it stopped working for me. I redeemed a 3 month card earlier this year and got the bonus month, but the recent ones I redeemed didn't.
Don't forget to turn on/off recurring billing each time you add a code to get one extra month. You can turn three cards into 12 months.

I just did it 3x and didnt have to keep turning off recurring payment( i already had it off before starting). I probably did it too fast or used the back button on chrome after redeeming the codes.
Had anyone bought ultimate to use ONLY for mobile gaming? I don't have, and don't plan, to get an xbox and won't play often in my PC but have thought about it for my phone if it's worthwhile. That and I saw an article that they may try to bring it to smart TVs, which would be awesome if true.
But for now, is it decent/usable on a phone/tablet or is that too tiny to really enjoy most games?

I would say it's not worth it for only playing cloud games on phone. Tablet might be okay with the bigger screen. To be honest maybe you should look into Apple Arcade on iOS or Google Play Pass on Android. Both of those are $5 a month and include games optimized for mobile.
You could, but it would be a much worse deal than this. Adding Xbox Gold Live codes to existing GPU subscriptions will convert to less time (12 months Gold = 4 months GPU). You are better off buying a few of these GPU 3 month codes.
Or you can let your GPU expire and downgrade to Live Gold, stack Gold codes and then upgrade to GPU again. This is assuming the 1:1: upgrade conversion still works next year.

Will Microsoft prevent another parent from buying Xbox gold live and converting to GPU for $1 while first parent still has an unexpired GPU subscription?
Instead of waiting for GPU to expire on my account in Jan, 2021 - can I just buy the 24 month Xbox live gold from Costco, apply it to my wife's account and convert to GPU for $1, in effect having GPU for 24 months through my wife's account that kids can continue to use? I don't care about the 1 month GPU overlap between mine and my wife's account as this simplifies it for me and I don't want to have to track this through January.
