To answer your question, these are a few reasons I can think of: asthetics, nostalgia, flavors, experiments, the kool-aid (aka YouTube, reddit, ASR, etc..), chasing a unicorn, technical specs,..
The first couple of tube amps I bought were for experimenting purposes. The last one was for the specs and it was on sale. I needed an AMP with high output impedence for my 600 ohms cans. Tube amps (not hybrid) usually have high output impedence.
Audio is a rabbit hole, so I kept it short and throw in some keywords for Google search.
