Few days ago , same card had "5% cash back on grocery store purchases (not including Target or Walmart purchases) on up to $12,000 spent in your first year of account opening"
I have two Freedoms and a Freedom Unlimited. Can I get this card and the signup bonus?

You will loose 5% benefit in select categories with this card. Not worth it.
it is a good card though it has extended warranty and phone protection as benefits. There are no other 0 annual fee cards that have both benefits (that I am aware of).
If I already have this card from a previous downgrade is there anyway for me to get it again and still get the bonus? That is of course without cancelling the card outright. Not sure if product changing is an option.

No one who has had the card in the past 24 months qualifies. But there is probably another card you don't have...
Can I request chase convert my freedom unlimited to a freedom flex and still get the bonus?
If not - assuming I open a freedom flex and then close the freedom unlimited will my length of credit be maintained with chase on my credit score or will the new card be reported as a new trade account at 1 month duration
Why do all their cards have to be "Freedom" cards? It seems like laziness in naming them, I had a Freedom card and a Slate card. They converted the Slate card to another Freedom card a year ago. Now I have two Freedom cards.
As a current Chase Freedom (not Flex) card owner, the application was seamless. All I had to do was to login to my account and confirm couple of legal statements. $200 bonus would be handy, though regular quarterly bonus would probably go to waste as it's exactly the same as in non-Flex Freedom card and I rarely exhaust spend limit on the current bonuses. I can only fill my car with gas so much before tank is full 😅

You don't need a Chase bank account to apply.
