Ender 3 Max for $289 with Coupon code ZP3MAX40F
When I added it to the cart I got a pop up that said I saved $40 and I didn't have to add it manually.
This printer is currently listed for $349 on Amazon.

This is a common problem due to the Ender's design, which has a single Z-stepper and spindle on the left side. The right side is held up purely by tension, which has to be set juuuust right. If it's not perfect, moving up or down the Z-axis changes the angle of the gantry just slightly, which makes it difficult to achieve good calibration even with an autoleveling kit. It took me a lot of tweaking before I started getting good results.
I'm concerned that increasing the width of the gantry by 50% without any mitigation is going to exacerbate it. But again, I haven't actually tried this printer; maybe they've done something to fix the issue.

CHEP on Youtube has a video he just released about this printer. He received a Beta version a few months ago and he wasn't too impressed. Some of the concerns you mention are addressed and fixed in the final release. I have had an Ender 3 for a couple of years now and absolutely love the thing. I have had little to no issues. I have upgraded quite a few parts, but even before then I was getting good consistent prints.
My favorite aspect of this printer is the online presence. Tons of support out there from fellow internet strangers. r/Ender3

"Creality Ender 3 MAX Better and Cheaper Improved Version"

While I like the 400mm height-option of the CR-10, I've yet to use. it. I have used the wider 300mm base on the CR-10 quite a few times so the add'l width is welcome.
The placement of the power supply and screen on the Ender 3 Pro, like this version, looks cleaner and takes up less space versus the CR-10's disconnected version. Both are 24v power supply units (PSU).
While I like the compactness of this 'Max' option versus the CR-10 V2, I do appreciate the addition of the 2nd z-axis motor CR-10 V2. I can't say for sure it's a requirement but having 2 z-axis motors on the CR-10 V2 inspires confidence. The CR-10 V2 also has the vertical brace add-ons included.
I think if you're familiar with 3d printing or a beginner willing to tinker with a limited budget, this model will give you options to print bigger. Otherwise, I'd either 1) wait for the CR-10 V2 to drop closer in price (got mine for $350 shipped) or purchase the Ender 3 Pro for ~200 from Microcenter (or similar).
For example, Marlin provides a mesh-leveling feature which, in our experience, negates the needs to purchase hardware add-ons like the BL Touch.

Additionally, if your willing to pay $10 a year you can get access to the nightly Marlin builds configured for most Creality printers, including the V2. I don't use the service, but if I really wanted the nightly builds I'd consider it. https://marlin.crc.id.a
Since this is based on open source software you can also compile it from the source yourself. There are probably other options I haven't listed, since this community is huge I'd be surprised if others where not compiling the firmware for their needs and publishing it somewhere.

So, maybe I am misunderstood your post but mesh bed leveling in Marlin is a menu item. Smith3D and Chep use Gcode in Cura which requires more hoops to hop through versus the Marlin...the site you provided states...Ender 3 V2 is unable to make "leveling enabled" persistent after reboot. Marlins is persistent, does not require geode in Cura, and is an easily accessible menu item.
