They are a Ryzen 3500 (6-core) with a GTS 1650 Super. A 1650 Super is roughly twice the graphical performance of a 5700G.

If either windows or mac is not a problem for you Maybe look on what matters like upgradability in ram and ssd which I don't think the mac mini has .
Also , if you really want to , in the future,you can swap the cpu itself or put a gpu in there .
That's about it , look at what you value most and go for it .
edit: just checked the m1 is similar in performance to the mobile 5700u so the 5750g should be better in performance but keep in mind that adobe softwares still being optimized for the new ryzen cpu/apu ,so although the 5700g have highr thread count and clock speed it might give lower performance in these softwares .
that should be solved in the upcoming adobe updates .
