Any advise or resources I should check out? I know I'll likely ruin some meat along the way!
I was looking for another smoker. My old Masterbuilt propane has been sitting outside in the desert without a cover for 8 years and is on it's last leg. The expensive 40" electric only lasted for about a year and a half before the controls stopped working. Really nice to get this one for about what I paid for my original propane model. The propane model has been much easier for me to maintain an accurate temp on in the winter months too. The MES40 would barely crack 200 in the winter. I've used the propane and had it hold steady at 230 in the while it was snowing.

The only time I had an issue with the flame going out was because I failed to check my propane level before I started and ran out 4 hours in. I noticed the temp drop probably an hour after the fuel ran out (hot day in AZ so it took a while to notice) and I finished it in the oven. Worked great and came out smoky, tender and juicy.
Ordered 05-31-21 and delivered 06-04-21 in Rhode Island....
