Considered by some prominent knife reviewers as the best Japanese chef's knife under $100. Normally $75. Made of VG-10 steel in Japan (also cheapest 8" VG-10 knife you are going to find that is actually made in Japan) which is a high grade Japanese steel (harder than German steels). Comparable to the Shun Classic though the Yaxell only has a single layer of cladding and not the multi layer Damascus (which is only for looks). Also the Yaxell is a 12 degree bevel while the Shun is only 16 so the Yaxell's cutting performance should be better. Yaxell is a large Japanese company and these knives are made in Japan. I recently got the Shun Classic Blonde for $60 (Amex points $60 off on Amazon). At the Shun's normal sale price of $127(FP) I would hands down get the Yaxell for $60 instead. I am considering picking one up at this price though I have already blown the budget for the month.

I own wusthof, shun and enso (cutlery n more exclusive line by yaxell). Yaxell has the best factory knives for the money. My enso knives beat my other German and Japanese on price and quality. 10/10. Seriously.

May I ask you which cutting board are you using with these knifes? ATK recommends edge grain, but I also read that end grain and rubber are better.
