It warms and maintains the temp of the water bath to the exact temp you want your meat to be until the whole piece of meat can reach that temp.

Do you like your steak a little pink in the middle? How about the whole steak being cooked like that edge to edge? You can't really overcook things unless you leave them for hours longer than needed (then the proteins start breaking down). You can safely undercook things as well (pasteurization).

I use mine mostly for steak, thick pork chops, and chicken thighs. Perfectly cooked and juicy every time. Set it and forget it. I tend to buy food in bulk on sale then preseason and vacseal them in the right portions so I can throw it straight from the freezer into the water bath.

If you don't have a vacuum sealer plan on buying one. You can do it without but it's a hassle.

Don't bother with the strawberry filled croissants. Buy a jar of the Bonne Maman jam, a pack of regular croissants, and apply your own powdered sugar. The combo is infinitely superior and the jar of jam holds a ridiculous number of servings.

Your friend made it wrong if it was boiled.

A steak cooked to perfection in a sous vide bath and then seared over screaming hot cast iron or an inverted charcoal chimney is perfection. You get the exact temperature you're going for, plus a perfect finish.

Way better than a raw piece of meat or a hockey puck grilled by someone so insecure about their masculinity that they'll only cook with a grill.

12 regular croissants for $5 (instead 6 strawberry croissants for $6 in this sale.)
costco sells a big jar of strawberry jam for $7.50.
they also sell a smaller jar of mixed berry jam for $8.

As someone else noted, I think your friend made it wrong.

There is a layer of plastic, either vacuum sealed or a zip lock, separating the meat and seasoning from the water, so it isn't boiled - the water indirectly cooks the meat to the temperature of the water.

Also, texture wise it does come out cooked but lacks that sizzle of a grilled or pan fried steak, so I always sear it 30 seconds on each side before serving.

Best steaks ever, every time.

your friend didnt sear it afterwards, hence the awful grey boiled look.

sous vide temp to medium rare.
sear in a hot pan for 30sec each side to get that nice tasty crispy looking crust.
and the steak will turn out to medium

Nothing wrong with it, but the tenderness and juiciness of the meat cannot be compared. It's always going to be tougher coming off the grill, that's the trade off. If that is how you prefer your streak, then by all means. Doesn't effect me.

As far as the 10 min vs. 1 hour thing, this is technically true. However Sous Vide has a big advantage in being "fire and forget" - a grill can flare up if you aren't watching your steaks and burn them, putting a swift end to the medium rare you wanted. Grills also don't provide uniformity of temperature. Sous Vide doesn't have these downsides, but yea, you have to plan a little ahead.

I was just looking at lowes for LVP type stuff and it was like $50 ish a box. You can easily check the prices online and compare, but the quality is a little harder to compare.

LG TVs - great
LG appliances - godawful

I bought the same LG microwave 2x, and the first one failed in 5 months. The second one failed in 1.2 years, and the warranty is one year. I asked a repair guy to come over and diagnose the problem so that I could get the Chase warranty benefit - he said he'd never buy an LG appliance. Both of the microwaves broke in different places, and microwaves are brain-dead simple machines... Just wish the microwave slot in my wall would accept something other than this LG microwave.

If he's setting it to 200 degrees to get the water boiling you should slap him and pull his man card. These are great for winter steaks that get finished on my skillet, sometimes it's just too cold to maintain the temps required to sear on the grill. The other 9 months it's open flame for steaks.

i haven't compared recently, but when I did, I recall the Costco price was not bad. in-warehouse pricing can be as low as $1.90/sq-ft (maybe a little more for their other brand) which I thought was good for the specs of the product compared to similars of other name brands and a very good upgrade (for the price) compared to bare-bones budget floors.
