I.P. offers ss mesh steamer baskets but those can be tedious to clean if used with chicken or similar. Bamboo is a healthy choice- line with a large cabbage leaf for easy clean-up.
Pot-in-pot I've used titanium from backpacker suppliers as it has no heavy metals like stainless. Pyro-ceramic such as vintage Corningware is also an excellent choice but cook times will be much longer.

As you have removed it from the heat and steam it only takes a minute or two before it is cool enough to reach inside and grab the stock trivet handles. The other major advantage of these models is the flat induction-ready bottom which allows you to start on a portable induction then transfer hot to I.P. The long wait to pressurize is thus eliminated and cooking time markedly shortened. Cooks may enjoy finishing many dishes on a PIC.

I have a MAX but don't use it much. I tested then gave away nearly all of the lesser models purchased on SD. Evo is that much better.
