Would rather have the Intel since not familiar with this brand.

But what's the advantage vs a NUC? RAM is limited to 16GB vs 64GB on the NUC, price is about the same, and the Minisforum is almost twice the size? All other specs look similar, except the Minisforum will take 2 SSD cards vs 1 for Intel.
Now, this is coming with 16GB Ram installed which is saving for around $60. Secondly, this is LPDDR4 which is normally faster than the 3200 MHz Ram and can boost the performance of the Intel Iris Xe IGP.

NUC 11 also has a second NVME slot, but it's 2240 so not sure how useful that is (drives are pricey and small).

It does not have a 2nd NVMe slot, it has a 2nd M.2 2242 slot which has SATA speed. M.2 slot does not equate to PCIe NVMe SSD support by default. It can be either PCIe NVMe or SATA III 6 Gbps and for NUC 11, the 2242 slot is SATA. Below is the spec from B&H site for storage.
Total Drive Bays1 x 2.5" (Internal)
SSD Slots1 x M.2 2280 PCIe x4 (Available)
1 x M.2 2242 SATA (Available)
On the other hand, this Mini PC has two 2x2.5" Bay. 2.5" SATA III SSD can be available up to 4TB and they are cheaper than M.2 SATA III SSDs for same capacity.

This basically limits your maximum storage expandability as 2242 slots are normally capped at 1TB and at that size, they're costlier than 2280 counterparts, for both SATA III and PCIe.

Is the Minisforum NVME slot gen 4 or 3, cause it doesn't say? The Intel is gen 4.
Do you work for Minisforum, cause this just doesn't seem like a good deal? Maybe at $400 it would be.
