I saw that some people can jams, chicken stock, even meat... Again, need to know more... Would have to know more about potential risks, how the texture and taste changes, if there are cheaper alternatives that truly are as good and won't rust, etc.

There are two basic types of canning: non pressure water bath canning (90% of mine) for non alkaline foods (stone fruits like cherries, and peaches) and pressure canning (alkaline foods like beans). You have to have a place to store you jars. After I am done eating from a jar I then put it in my containers in my shop while most people have the convenience of just tossing the jar in the trash. Some of my jars are probably as old as 50 years. I do about 120 quarts a year (I used to do 200 quarts a year). If I didn't raise my own fruit I don't think it would be economically feasible. I mostly do it to save my fruit and to know what goes into my food. If you have any questions I will gladly answer them as good as I can. My $.02.
