Some of the 128GB models labeled EMMC are actually NVME now, like the one for this unit. It would be a fluke if the boards were identical.
I'd say for 95% of the tasks that Chromebooks do, there would be no difference in performance between the i3 and i5. Both are somewhat overpowered for a Chromebook
For some games, video editing, photo editing etc, you might feel a small bump.
The biggest advantage on the i5 version would be the SSD vs EMMC, especially if you ever planned to install an alternative OS on this.
